Slow Cooker Tortellini Soup
The original recipe can be found in Gooseberry Patch’s new Hometown Christmas Cookbook.
And the recipe? It tis quite yummy!
I tweaked it a bit from the original to meet our tastes.
Instead of using plain stewed tomatoes, I used my absolute favorite tomato blend Diced Tomatoes with Basil, Garlic, and Oregano or otherwise known as if you haven’t tried it, go to the store and buy them now.
And, yes in this case brand matters and no, they aren’t paying me to say that…
I also doubled up on the tortellini… because you can never have too much tortellini.
We make this soup quite regularly these days. Miss Add has declared it her favorite soup and requests it often. I consider that a win considering the soup is full of tomatoes and spinach and she eats it all right up!
Tortellini Soup Quick Stove Top Version
If you don’t have 2 hours to crock, you can easily convert this recipe to a quick soup on the stove. Just heat your Red Gold tomatoes, broth and spinach to a boil and add the tortellini right to the soup (no pre-boil) and cook until your tortellini are done. Dinner’s on the table in about 20 minutes.
Slow Cooker Tortellini Soup
Ingredients
- 96 oz Chicken Broth (2-48 oz containers)
- 10 oz Package Frozen Chopped Spinach
- 30 oz Cans Diced Tomatoes Basil Garlic and Oregano (2-15 oz cans) (or Diced tomatoes and add BGO on your own)
- Salt and Pepper to taste
- 18 oz Frozen Cheese Tortellini (2-9 oz pkgs)
- Shredded Mozzarella or Parmesan garnish
Instructions
- Combine all ingredients in slow cooker except tortellini.
- Cook on high for 2 hours
- Prepare tortellini according to package and add to soup.
- Garnish bowls of soup with cheese.
