The first time I ever had Cajun Pecans was a few years ago when my friend Jackie from Syrup and Biscuits sent me a lovely gift in the mail of her pecans in the dead of winter. They were so yummy. So when I saw this recipe for Crock Pot Roasted Cajun Pecans in Gooseberry Patch’s Slow Cooker to the Rescue, I KNEW we were going to give them a try!

They definitely don’t disappoint and they were so incredibly easy!!
Crock Pot Roasted Cajun Pecans

Ingredients for Crock Pot Roasted Cajun Pecans
- 1/4 cup butter melted
- 1 lb pecan halves
- 1 teaspoon chili powder
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1/4 teaspoon cayenne pepper
How to make Cajun Roasted Pecans in the Crock Pot

Pour butter into the bottom of a 2.5 quart slow cooker. We used this one.

Add pecans and stir to coat.

Mix together remaining ingredients in a bowl and stir into pecans.

Cover and cook on high for 15 minutes. Then remove lid and cook uncovered for up to two hours on low stirring occasionally.

Pour onto a cookie sheet to cool. Store in a sealed container.

Hi, just have a couple of questions. I’d like to double this and use a 5qt crock pot. Will the same cooking times work or should I cook covered longer than 15min?
Mike also said to switch to low heat after the initial 15mins on high, but the recipe doesn’t say that. Which is right?

Sorry about that Jim! Mikey was correct. I have fixed the recipe. When you uncover you flip it to low. Doubling in a 5 quart may take less time because even at double I am not sure it will be full enough to slow the cooking time. I would definitely be checking it occasionally when you stir and it may be quite toasted by 90 min mark.
