Our Crock Pot Taco Chili is a hearty soup with savory beef, tomatoes, peppers and zucchini. Taco seasoning and cumin add a smoky flavor to this zesty twist on traditional chili.

We have been enjoying this Crock Pot Taco Chili for years and readers love it too!
The peppers and zucchini add some veggies to this hearty bowl and we switched out taco seasoning for the chili powder to give it a bit of a tasty twist. If you haven’t tried it yet, it is a must-try crock pot recipe!
This is one of those recipes that are great to let simmer on low all day or able to be made in a few hours if you crank your slow cooker up to high.
What You Will Need to Make Crock Pot Taco Chili
Cooking Equipment
- 6 Quart Slow Cooker
- Large Skillet (If your slow cooker does not have a browning feature like this one).
Shopping List for Low Carb Taco Chili
- 2 lbs Ground Beef
- 4 cups Beef Broth
- 28 oz can Diced Tomatoes
- 2 packets Taco Seasoning
- 1 tablespoon Cumin
- 1 medium Zucchini
- 2 Anaheim Peppers
- 1 tablespoon Garlic
- 1/4 cup Onion
- 1/2 cup Bell Pepper
- 7 oz can Chopped Green Chilies
- Chili Toppings (Sour Cream, Shredded Cheese, Guacamole, etc.)

Crock Pot Taco Chili
Ingredients
- 2 lbs Ground Beef uncooked
- 4 cups Beef Broth
- 28 oz can Diced Tomatoes
- 2 packets Taco Seasoning
- 1 tablespoon Cumin
- 1 medium Zucchini chopped
- 2 Anaheim Peppers chopped
- 1 tablespoon Minced Garlic
- 1/4 cup Onion chopped
- 1/2 cup Bell Pepper chopped
- 7 oz can Chopped Green Chilies
- Chili Toppings Sour Cream, Shredded Cheese, Guacamole, etc.
Instructions
- Brown ground beef in a skillet or slow cooker with a saute feature
- Drain beef and place in a 6 quart slow cooker.
- Add remaining ingredients (except chili toppings) to slow cooker and stir well.
- Cook on low for 6-8 hours or high for 3-4 hours.
- Serve in bowls with desired toppings
