I do not like broccoli. And I haven’t liked it since I was a little kid and my mother made me eat it. And I’m President of the United States and I’m not going to eat any more broccoli.
Poor lady must not have had a great broccoli cheese soup recipe. I feel her pain, we have been without one for quite some time. After Cris had quite a crock pot fail a couple years ago, we had been a little hesitant to try again. But then we saw this one from our friends at Gooseberry Patch in one of our all time favorite crock pot cookbooks —Slow Cooking All Year ‘Round— and we decided to give it another shot. Now old George sounds like he is pretty set in his ways, BUT I dare say that he would have even LOVED it!
We made this soup for a recent Christmas party and it was definitely a favorite. It’s a great way to feed your kids a warm, creamy, cheesy soup while still sneakin’ in them veggies! Read my lips, this soup is DELICIOUS!
Broccoli Cheese Soup
Ingredients
- 1/2 cup butter
- 16 oz package frozen broccoli cuts
- 21.5 oz cream of chicken soup (2 – 10 3/4 oz cans)
- 21.5 oz cream of mushroom soup (2 – 10 3/4 oz cans)
- 4 cups milk
- 16 oz pasteurized cheese spread cubed
Instructions
- In a skillet over medium heat, melt butter. Add broccoli and cook for 5 minutes while stirring until broccoli is heated (5-10 minutes)
- Add broccoli to crock pot and stir in remaining ingredients. Cover and cook on low for 3-4 hours, stirring occasionally.
Crock Pot Recommendations
I used Cris’ self-stirring crock pot for this recipe so I didn’t have to lift the lid to stir the cheese as it melted, losing the heat. It made this easy soup even easier to make. It was literally a set it and forget it recipe until it was time to serve which is unusual for such a cheesy soup. However, if you don’t have a self-stirring crock pot, don’t fear. Any 5-6 qt slow cooker should work just fine, just stir it up from time to time.
Poor George… He would have really liked this recipe. It wasn’t taxing to make at all…

I absolutely cannot bear Velveeta. It is just awful. Is there anything I can use instead?
Hi Lynne-
I have not tried shredded cheddar but that would be my recommended substitute. If it doesn’t get nice and creamy, you might try adding some cream cheese to see if that helps.
