We love this simple dish. It is so easy to throw together and is great served as a delicious main, or shredded up as a yummy sandwich or wrap! If you do not enjoy poblano peppers, feel free to substitute anahiem or bell peppers.

Crock Pot Cheesy Pepper Chicken (Low Carb) Recipe
Crock Pot Cheesy Pepper Chicken
Ingredients
- 3 lbs Boneless Skinless Chicken (we used thighs)
- salt and pepper to taste
- 2 teaspoon garlic powder
- 1.5 tablespoon cumin
- 2 poblano peppers seeded and sliced into bite sized pieces
- 1/2 cup butter sliced
- 7 oz Havarti cheese slices or cheese of your choice
Instructions
- Place chicken in the bottom of your slow cooker.
- Season with salt and pepper and sprinkle garlic powder and cumin on top.
- Add peppers and butter slices evenly on top.
- Cook on low for 4-6 hours or on high for 2-3 hours, until the chicken is tender.
- Add cheese slices on top of chicken and continue to cook on high briefly until cheese melts.
- Serve with a slotted spoon.

If You have a link to recipes for two and I overlooked it, I apologize . I cook just for my wife and me and would love to see some suitable recipes. (I could send you one of my 1.5 quart crock pots if you need one 😁).
We don’t have many recipe for two since I have a family of four to feed. However, at the top of every recipe card, there is a blue number for the servings. If you tap on it (on a phone) or hover over it (on a computer), you will see a slide bar appear. When you move that bar, it will adjust the amounts in the recipe to fit the number of servings you move the slide bar to. That way you can adjust any of our recipes to 2 servings. Make sure you watch a recipe closely the first time you make it so you can adjust the cooking time as needed. I hope this helps!
