I made a big batch of this before our big marathon watching of our favorite show on Netflix and everyone loved it.

I had been eyeing that Mexican Style RO*TEL and after using the Chili Fixin’s RO*TELย  in our Chili Vegetable Ranch Hand Soup, I knew it would great in a dip. So we decided to combine the tomatoes with some Homestyle Wolf Brand Chiliย and our Crock Pot Chili Cheese Dip was born!

Crock Pot Chili Cheese Dip Notes

  • We used a 2 1/2 qt slow cooker to make this dip and it filled it all the way to the top. You could use a larger slow cooker, but just make sure to watch it closely as it will probably get a lot hotter than a smaller size and will need more stirring.
  • If your slow cooker tends to get hotter on one side, rotate your crock inside the unit periodically for more even cooking.
  • If you do not like spicy flavors, you can turn down the heat on this recipe by substituting mild flavor RO*TEL for the Chili Fixin’s.

Crock Pot Chili Cheese Dip

Ingredients

  • 2 Cans rotel we used 1 can Mexican Style and 1 can Chili Fixin's
  • 1 Can Wolf Brand Chili (Homestyle flavor)
  • 32 oz Processed Cheese Product cubed
  • 1 Tablespoon Chili Powder

Instructions

  • Pour RO*TEL in the bottom of your slow cooker.
  • Add cheese product and pour Wolf Brand Chili on top.
  • Sprinkle with chili powder and give a stir.
  • Cook on low for 1 hour, stirring occasionally. If cheese has not blended cook for another 1/2 hour, stirring occasionally.
  • Serve with corn chips

  3. My family prefers the diced tomatoes and green chilies. We used to buy the Queso in a jar but once we tried Rotel, that’s our choice now!

    I hope Walmart has the Rotel Chili Fixin’s, that’s the one I really want to try. I’ve always used the Original Rotel in chili & in dips.

    Crocks pots are life savers for with my busy lifestyle working, getting the kids to school and activities after work and school. Our dinner is always ready and delicious and waiting on us when we returned home from a busy day. I can feed my family a delicious and healthy meal in no time then it homework and off to bed.   12. I usually use the original Rotel, only because the family doesn’t like anything too hot.
    I have used it in meatloaf, cheese dips with Velveeta and sometimes add some hot Jimmy
    Dean sausage. GOOD STUFF!! Love your site ๐Ÿ™‚

    I live alone so this is a perfect size for me. I have a cupboard full of the original Ro-Tel Mild Diced Tomatoes & Green Chilies that I use to make my dip with. One can of refried beans and one can of Ro-Tel with the juice. Mix together and heat until very hot. Then add as much shredded Mexican Four Cheese as you would like until you get the thickness you prefer and the cheese is completely melted. Serve with warm tortilla chips or anything else you would like and watch it disappear.

  19. I like the Original as some may find the other flavors “too hot.” I remember my late Momma making “Rotel Dip” back in the 1970’s. It was quite “exotic” as down South at that time Mexican food was a novelty. We were in awe, especially when she added cooked sausage to the dip. I still make it to this day, and always remember Momma.

    I love, love Rotel dip. I always make this during as an appetizer of any sports event I host at my home. It’s always a huge “hit”!!. I would love to have this crockpot, where I can have it specifically for this dip.
