Truth be told, I love me a good egg casserole and now that we are eating more low carb recipes, I find egg casseroles to be a delicious way to make a great breakfast recipes that carb lovers love too!
This Crock Pot Ham Broccoli Cheese Casserole is an adaptation from a recipe I found in Easy Low-Carb Slow Cooking. We first cooked this one up in our Camper Kitchen one weekend when Aunt Lou and I got the kids together for a cousins’ weekend.
I just love cookin’ up egg casseroles in the camper. They make for an easy one-dish meal that is full of protein to start the day off right. The pre-diced ham and frozen broccoli florets made this dish super easy to throw together even while we were camping.

- This Crock Pot Ham Broccoli Cheese Casserole is an adaptation from a recipe I found in Easy Low-Carb Slow Cooking.
- We like cooking this up in our Cuisinart Multicooker and our Casserole Crock because both have a nice rectangle shape and let us serve more like a traditional casserole. But any traditional 6 quart slow cooker will work as well.

Crock Pot Ham Broccoli Cheese Casserole Recipe
Ingredients
- 1 Tablespoon Butter or Bacon Fat
- 10 Large Eggs beaten
- 1 Cup Heavy Cream
- 1.5 Cups Shredded Sharp Cheddar Cheese Divided
- 1/3 Cup Shredded Parmesan Cheese
- Salt and Pepper to Taste
- 1 Cup Diced Ham
- 16 oz Bag Frozen Broccoli Florets thawed, But Not Cooked
- 1/2 Small Yellow Onion diced
Instructions
- Coat a 7-6 quart slow cooker or the casserole crock with butter or bacon fat.
- Add the eggs, cream, 1/2 cup of cheddar, parm, salt and pepper.
- Whisk in the crock until well combined and then stir in ham, broccoli and onion.
- Top with remaining cheddar.
- Cook on high for 1-3 hours until set.

I love this recipe! It cooked great in my casserole crock, took closer to 3 hours tho. I will say that I didn’t use the broccoli, I used a package of Jimmy Dean Meatlovers crumbles. Yes, with the ham. It was very meatty, but we loved it!!! I made it for Sunday night dinner, then had leftovers for breakfast during the week.

Can u use egg whites only?
Hi Glenda- I haven’t tried it with just egg whites. I would probably try half egg whites first and see how it goes before reducing it further. Let me know how it goes!
This sounds delicious and hubby loves broccoli! I’m always curious how the center of the casserole crock cooks. Did it set up well in the center. I thank you guys for all you do, proud to be a member of the Crock Posse! 😊
Hey Kim! I haven’t had an issue with the center getting done, however, it does rise higher overall in traditional/multicookers. Hope that helps!
Pulled the casserole crock up on Amazon and all the reviews said it gets dangerously hot on the outside. What’s your take on that?
Hi Susan-
I would say my casserole crocks (I have 2) are very similar to most of my other crock pots that do not have an insulated exterior. They are hot to the touch and I always make sure they are on a counter with nothing around them.But I do that with every slow cooker I own anyhow. I personally do not find my units dangerous, I just know I need to exercise caution with them just like other appliance in my kitchen. Hope that helps!
