Michael Angelo’s™ Stuffed Tilapia is a seafood product found in the frozen aisle at your local grocery store. Before developing my recipe, I prepared a filet to taste and I was immediately surprised at the intense flavor. I absolutely loved the savory garlic-spinach stuffing the complimented the fish so well. It reminded me of a restaurant quality dish.
Crock Pot Tomato Rice with Stuffed Tilapia
I immediately began thinking that would be a fantastic at home treat for dinner or a great way to make a work-at-your-desk lunch a little more bearable at the office. Then I thought about what would go well with such a savory and flavorful dish and would be easy to make at home OR at the office.
Then it hit me. The garlic from the dish would go so well with our simple tomato rice that can be prepare at home in a small 1-2 quart slow cooker OR even in a lunch warmer for those that need a portable option to take to work. You can use any variety of diced tomatoes, but my personal favorite kind to use is the basil, oregano and garlic diced tomatoes, closely followed by the garlic and olive oil diced tomatoes. Both varieties play very nicely with the spinach, garlic and tomato flavors of the fish.
Crock Pot Tomato Rice with Stuffed Tilapia
Ingredients
- 1 package Michael Angelo's™ Stuffed Tilapia - prepared
- 1/2 Cup Quick Cooking Rice
- 15 oz Can Diced Tomatoes- Basil Oregano and Garlic Flavored.
Instructions
- Pour your rice into your 1-2 quart slow cooker OR lunch warmer.
- Stir in tomatoes.
- Cook on low for 1 hour, stirring occasionally.
- Plate rice and top with stuffed tilapia.
