Is it still winter?! Somehow a little part of me thinks – just like a little kid – that once we put away the stockings and put up our new calendars, winter will be over. Cold weather will be on its way out, and I can stop keeping track of all those wayward gloves and mittens.
Silly, right?
This year I’m prepared, though. Bring on the frigid temps, because I’ve got a freezer full of chili. And bundle up and come on over to join me, because I’ve got plenty to share!
Whether you’re warming up after a day full of snowball fights (or scraping a couple inches of ice off your windshield), planning a Superbowl party for a crowd, or preparing meals to have on hand after a delivering a January baby (what? just me?), this chili is the perfect solution.
This white chicken chili from Gooseberry Patch’s 101 Easy Entertaining Recipes is full of flavor – and super easy, too! (As easy, even, as my award-winning traditional chili!)
You can make this delicious chili a couple different ways – on the stove, in the slow cooker, or even a combination of both. Make it in less than an hour on the stove, or let it cook all day long so it’s ready when you get home. Or, mix it up on the stove, let it cool and freeze it – then defrost and stick it in the Crock Pot whenever you need a warm meal!
Since I am, actually, getting ready to have a baby and filling up my freezer with easy meals, I picked the stove/freezer/slow cooker combo. I think this soup strategy would work great for a family dinner or party, too – cook in advance, so you don’t have to worry about it the day of your event!
White Chicken Chili
In a large pot saute the onions in oil until tender. Add in chicken, broth, beans, chiles and seasonings. Simmer on medium heat for about 30 minutes (stirring often). At this point, you can add in sour cream and cheese – or let cool and freeze.
If you choose to freeze it like I did, defrost the night before you want to serve it. Place defrosted soup in the slow cooker and cook on low for 6-8 hours or high for 3-4 hours. Right before serving, add in sour cream and cheese. Serves 16-20.
And if you’re a big cheese fan like the people in my house, add in a little extra on top of each bowl. Because . . . why not?!
I loved this white chili. Despite its pale appearance, it’s full of flavor and reminds me of my favorite chicken enchiladas. But I think next time I might go a little crazy and top my bowl with pepper jack cheese. It will be white chicken chili – for a crowd, with a kick!
Ingredients
- 2 onions chopped
- 1 tbsp olive oil
- 6 cups chicken broth
- 31 oz Great Northern beans (2-15.5 oz cans) drained and rinsed
- 15 oz chicken (3-5 oz cans) drained
- 8 oz diced green chiles (2-4 oz cans)
- 2 tsp ground cumin
- 1 tsp garlic powder
- 1.5 tsp dried oregano
- 1/4 tsp white pepper
- 12 oz sour cream
- 3 cups shredded Monterey Jack cheese
Instructions
