Air Fryer Roasted Vegetables are an easy recipe to toss in your air fryer and enjoy as a savory side dish for just about any meal. We like to make these in our traditional air fryer, Ninja Foodi and Ninja Foodi Air Fry Oven.

How to Make Roasted Vegetables in a Ninja Foodi Air Fry Oven
Cris here. We love roasted vegetables. And, I love how easy it is to make roasted vegetables in my air fryers! My absolute favorite way to make them is in my Ninja Foodi Air Fry Oven. I love how much I can spread out the vegetables in the crisper pan. You can use any air fryer. You just might have to cook it in batches.
This recipe for Air Fryer Roasted Vegetables can be changed to include your family’s favorite combination of vegetables. You could try combinations of yellow squash, red bell peppers, onions, green beans, broccoli, asparagus, etc. You could even use this recipe to make a whole meal of it!

- I prefer to make this dish in my Ninja Foodi Air Fry Oven. I love how much I can spread out the vegetables in the crisper pan. You can use any air fryer. You just might have to cook it in batches.
- We used zucchini and mushrooms in this batch of roasted vegetables. We have used combinations of yellow squash, red bell peppers, onions, green beans, broccoli, etc.
- You can use any oil or fat to toss the vegetables depending on your diet needs. We have used olive oil and melted lard in the past.
- These vegetables are great on their own but also great with a sprinkle of Parmesan or pepper jack cheese.

Air Fryer Roasted Vegetables
Ingredients
- 2 tablespoons olive oil
- 1 medium zucchini sliced
- 8 oz Fresh Mushrooms sliced
- 1 tablespoon minced garlic
- garlic powder to taste
- onion powder to taste
- salt and pepper to taste
Instructions
- Preheat air fryer to 390.
- Combine all ingredients in a bowl and toss well to coat in oil.
- Spread out in a single layer in your air fryer basket (in batches if needed).
- Cook for 10 minutes and stir.
- Cook for an additional 5 to 10 minutes until vegetables reach your desired texture.

This is amazing! I Used frozen veggies, and just roasted on 390 for 6 mins in my Ninja Foodie, then mixed and seasoned, then back in the Foodie for 8 minutes and they were so good!!!
