Our Crock Pot Chili Cheese Dip is so easy to throw together and the perfectย recipeย for your next party whether it be at a potluck or staying in and bringing the party home to hibernate this season.
When the folks over at RO*TEL and ConAgra asked me to share another recipe with you that would be perfect for bringing the party home during hibernation season in a sponsored post, I knew we HAD to try our hand at a fantastic dip.ย And, let’s just say, the family was NOT disappointed. I made a big batch of this before our big marathon watching of our favorite show on Netflix and everyone loved it.
I had been eyeing that Mexican Style RO*TEL and after using the Chili Fixin’s RO*TELย in our Chili Vegetable Ranch Hand Soup, I knew it would great in a dip. So we decided to combine the tomatoes with some Homestyle Wolf Brand Chiliย and our Crock Pot Chili Cheese Dip was born!
Crock Pot Chili Cheese Dip Notes
- We used a 2 1/2 qt slow cooker to make this dip and it filled it all the way to the top. You could use a larger slow cooker, but just make sure to watch it closely as it will probably get a lot hotter than a smaller size and will need more stirring.
- If your slow cooker tends to get hotter on one side, rotate your crock inside the unit periodically for more even cooking.
- If you do not like spicy flavors, you can turn down the heat on this recipe by substituting mild flavor RO*TEL for the Chili Fixin’s.

Ingredients
- 2 Cans rotel we used 1 can Mexican Style and 1 can Chili Fixin's
- 1 Can Wolf Brand Chili (Homestyle flavor)
- 32 oz Processed Cheese Product cubed
- 1 Tablespoon Chili Powder
Instructions
- Pour RO*TEL in the bottom of your slow cooker.
- Add cheese product and pour Wolf Brand Chili on top.
- Sprinkle with chili powder and give a stir.
- Cook on low for 1 hour, stirring occasionally. If cheese has not blended cook for another 1/2 hour, stirring occasionally.
- Serve with corn chips

I’ve tried the original many times, and truly enjoy it. Now I plan to try all the other five flavors. I’m sure they’ll be all my favorites soon.
I always just get original, but I’d really like to try the chili fixin’s, Mexican style and hot, if my store has them. I never noticed these flavors before.
I wish they would make a flavor that doesn’t have chilies in it. I think I would like the lime and cilantro flavor is it didn’t have chilies in it.
I want to try the Mexican flavor Rotel. Lime and cilantro…yum!
Chunky
I really like the Chunky style for my salsa recipe.
I haven’t seen the chili fixins before. I bet we would like that. I like original the best. Some of my kids like the hot one.
I like the diced tomatoes with green chilies mild. I think I will try the chilie fix next.
My fave is Mexican Style!!!! Cilantro and Lime ROCK!!!!!!!
I would like to try the Mexican style.
Original
I love Rotel in dips but have never tried Mexican Rotel. I’m going to use it in dips, tacos, enchiladas, etc. I can’t wait! And I love Wolf Brand chili, alone, on hot dogs, etc. Love dips especially! And I love, love, love Recipes that Crock (cRockin’)!
i LOVE THIS RECIPE SITE
Oops, forgot to say original.
I love the Mexican style Ro-Tel in my meatloaf.
I would love to try the mild Ro*Tel as the regular is too hot for me.
I use Ro tel tomatoes all the time. Love them. The only flavor that I have not tried is the chili fixing. I will be trying them in your new chili veggie ranch hand soup that looks so yummie. The latest use of Rotel tomatoes was in a sausage cheese Rotel dip which I used the mild Rotel tomatoes. I also visited the Rotel site.
My husband and I always use Rotel mild in our chili but that boy of ours MUST have the hottest flavor available on everything! (His stomach has to be lined with asbestos.) ๐
I have used all of them, love them in both dinner recipes and appetizers. Favorite has to be the diced tomatoes with lime juice and cilantro !! Yum ๐
I like the original but it is the only one I’ve tried. I did not know there were so many flavors. I’m definitely going to try the chunky, chili and Mexican ones! I also told a few friends about this recipe, went and visited both rowel and wolf chili pages on Facebook and I’m following on Instagram now ๐ can’t wait to make this this weekend!
My overall favorite is Ro-Tel Mild Diced Tomatoes & Green Chilies. I use it on many of my soup and chili dishes as well as others.
Trying MILD next.
OH that chili fixin’s looks interesting! I think my family would love to try that one.
My family loves Original Rotel. I use it in so many recipes. I’ve never tried Mexican Rotel but would love to.
I use Mexican style in my chili and hot sausage dip yum yummy
I mix one of each for my cold taco dip. My family loves it!
I usually buy the Mexican Style Rotel.
