Growing up, every Sunday my mom would throw a tube of cinnamon rolls in the oven while we all rushed to get ready for church. While they were not homemade by any means, it always felt like a special treat. These days, as a mother rushing around on Sunday mornings myself, I can’t imagine getting the rolls in a pan, in the oven and perfectly baked–not burned –before we head out the door. Yep, we are more of a granola bar as we head out the door kind of family.
So when I saw this recipe for Crock Pot Cinnamon Roll Casserole, it brought back all kinds of memories because it too used those cinnamon rolls my mom would make each week. So I decided to give it a try when we had a lazy morning at home.
This Cinnamon Roll Casserole definitely didn’t disappoint! The hubs and I both thought it tasted a lot like a yummy flan on the bottom with a delicious layer of cinnamon rolls on top. Definitely a keeper!

Crock Pot Cinnamon Roll Casserole Recipe
Crock Pot Cinnamon Roll Casserole
Ingredients
- 24 oz tubes of cinnamon rolls (2 – 12oz tubes) cut into quarters- divided
- 4 eggs
- 1/2 cup whipping cream
- 3 tablespoon maple syrup
- 2 teaspoon vanilla
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
Instructions
- Spray your 6-quart crock with cooking spray. (I used my Searing Slow Cooker)
- Place a layer of cinnamon roll pieces to cover the bottom of your slow cooker completely. (Reserve icing packets)
- Beat eggs, cream, maple syrup, vanilla and spices until blended well.
- Pour evenly over the rolls in the slow cooker.
- Place remaining roll pieces on top and spoon one packet of icing evenly over rolls.
- Cover and cook on low for 2 1/2 to 3 hours or until sides are golden and rolls are set.
- Drizzle remaining icing over top and serve warm.

Just want clarity on a couple of things, I’m guessing “whipping cream” is the same as heavy cream? And is the maple syrup the same kind of maple syrup you put on pancakes? Thank you!

Yes, heavy cream and whipping cream are basically the same thing. you can use either.

Yes, heavy cream will work 🙂 And as for they syrup, if you go to the syrup aisle you will find bottles that say “Pure Maple Syrup”.

I was curious if the top cinnamon rolls come out as gooey as the bottom I assume would? With all of the wet ingredients only going over one layer, just makes me think the top ones would be a lot more dry than the others.TIA! 🙂

It is a layered casserole, so the bottom layer has a flan like consistency and the top layer is a layer of cinnamon rolls. You can certainly try pouring it over top of everything (I have not tried that) but I would assume the majority of the wet ingredients will settle on the bottom anyhow. Either way, I hope you enjoy!

Ok here it goes everything is in the crock pot. I am using a 4qt pot so I’m shooting for another 30-45 mins longer. I can’t wait until everyone wakes up to the smell of this and pumpkin spice coffee.

I’m going to make this in the morning, it looks so good. I have a question though, I thought when the recipe called for maple syrup, you was referring to pancake syrup. Do you put in maple extract, is that what you mean? Please help!!! I so want to make this!! Thank you so much for the delicious recipe!!!

You can buy real maple syrup. It’s near the pancake syrup.

You can make your maple syrup also. 1 cup brown sugar, 3/4 cup water. bring mixture to a boil turn down to a simmer for 15 min. Do not let it boil again. Add maple extract flavoring. I use two tablespoons. Now you have very good tasting maple syrup.

Yes, the eggs cook up like they do in a normal casserole. Nuts would be a great addition! Enjoy!!

Can I leave nutmeg out ? My granddaughter has a nut allergy . Is there something you would substitute for the. Nutmeg ?

Nutmeg is not a tree nut and therefore should be of no concern to someone who has typical nut allergies. Nutmeg is actually more of a seed.

I used a 6 qt crock… if you use a smaller one, you might just need to increase the cooking time.

I was wondering if the eggs are necessary. Does it cook through. And is it like scrambled eggs?

You could certainly just make the cinnamon rolls but that changes it from a casserole. The texture and taste of the bottom layer reminded us more of flan than anything else. Most definitely not scrambled eggs. Enjoy!
