Are you looking for a way to change up Taco Night? This Slow Cooker Beefy Taco Soup is fantastic on its own or as a starter to a great Taco Salad.
The original inspiration for this recipe comes from Gooseberry Patch’s Everyday Simple Suppers.
I was all set… with my beef, tomatoes, beans and taco seasoning and then I went to add my tomato sauce and thought to myself that I should probably add a bit of sugar.
Then I remembered that Green Giant had recently sent me their new Veggie Blend-Ins and I thought the carrot puree would be a nice substitute for the tomato sauce (and sugar I had planned to add to cut the acid of the tomatoes).
So I switched them out and waited to see what the family would say…
Slow Cooker Beefy Taco Soup
Everyone loved the Beefy Taco Soup (except Miss Add who of course ate around the beans because they were too red or too oval or some reason totally logical to a six year- old) and no one knew that mom snuck some carrots into dinner ;).
The next day were served up Frito Taco Salads (which I will share on GOODEness Gracious later this week) and in an instant had a completely different meal with the leftovers.
Slow Cooker Beefy Taco Soup
Ingredients
- 1 lb Ground Beef browned
- 14.5 oz Can Stewed Tomatoes
- 15 oz Can Kidney Beans Drained and Rinsed
- 1.25 oz Envelope Taco Seasoning Mix
- 8 oz Carrot Puree or Tomato Sauce
- Garnish: Shredded Cheese and Sour Cream
Instructions
- Combine ingredients in a 4 quart slow cooker.
- Cover and cook on low for 6 to 8 hours.
- Serve with shredded cheese and sour cream
Browning Beef?
A lot of slow cooker recipes call for browned ground beef. That can be a pain when you have your heart set on a one-pot meal. There are two simple ways to avoid washing yet another dish every time your slow cooker meal calls for browned ground beef.
- Freezer Browned Ground Beef: Fix up a month’s worth of Ground Beef in a crock pot and freezer in freezer bags until you are ready to cRock, grab a bag out of the freezer and toss in.
- Brown Your Beef in the Pot: If you have a slow cooker that is stove-top safe (like this one) you can brown your beef in your crock right on your burner and then move your crock back into the unit and cRock away!

What is the difference between a crock pot and a slow cooker and can you interchange all recipes

Hi Pat- Most folks use the terms interchangeably. Crock Pot is technically a name brand of slow cooker. So while all crock pots are slow cookers. Not all slow cookers– which come in many different brands– are crock pots. However, any recipe can be used in either interchangeably. Many people use the term crock pot informally like the use the word kleenex to refer to a tissue, even if the tissue is a different brand. Hope that helps!

Sounds just like my stovetop taco soup (sans the beans!) except I also add 1 14oz can of mexicorn for some color and added taste.
