How to Make Avocado Salad
Cris here.
I am so excited to share with you a low carb side dish that my family I have been so crazy about lately! This Avocado Salad recipe reminds me quite a bit of one of our favorite non-low carb sides and so we were thrilled when we discovered this dish! We were inspired to create this dish by a recipe found in one of our favorite low carb cookbooks: Bacon & Butter.
We make this dish often in our Camper Kitchen these days. It is truly one of our favorites!
How to Choose an Avocado
The quality of the avocado you choose for this recipe will greatly impact the enjoyment of this dish. If you are planning on making this dish immediately, you will need choose ripe avocados from the grocery store. When picking out your avocados look for ones dark in color, that are not mushy to the touch. Ideally your avocado will give slightly when pressed. The goal is to have a nice buttery avocado to chop up for this dish. However, if the avocados at the store are all too green and hard, you can buy them and wait for them to ripen at home before making this dish.

Love this. I have also added a pint jar of my home canned chicken to it for an avocado chicken salad.
I adore this recipe!!!! The only change I made was to use red onion instead of the yellow. Just my preference! Thank you so much!
So glad you enjoy it as much as we do. Thank you so much for taking the time to let us know!
