Ingredients

Instructions

  • Combine the zest and juice of 2 limes, Olive Oil, Mustard, Worcestershire, Soy, 3 green onions, 2 garlic cloves, salt and pepper to taste.
  • Mix well.
  • Place chicken in a gallon sized baggie.
  • Pour marinade over the chicken and marinate for at least 1 hour to overnight.
  • Remove chicken from bag and place in a 6 quart slow cooker.
  • Discard bag and juices.
  • Slow cook chicken for 2-3 hours on high or 4-5 hours on low.
  • Meanwhile combine juice and zest of one lime with extra virgin olive oil, 3 chopped onions, 2 minced garlic cloves and basil to make a dressing.
  • Plate chicken and pour dressing over top before serving.

    How would this freeze? I need smaller servings (2-3), which I cook in my 2.5 quart. I try and make up a full size batch, and before cooking, I divide it and freeze half for another day.

    I have a friend that always tries to make 2 batches- one for the freezer, and one for that nights supper.
    This gives a meal ready to go, with no additional work on my part. Just grab from freezer the night before, thaw in the refridgerator, put in slow cooker the next morning.

    I don’t have any fresh basil, but I have some freeze dried Litehouse Basil I got at Costco – how much would you recommend I use when using that? Can’t wait to try!

      Hi Chelle-
      I believe typically folks use 1 tsp dried to every tablespoon fresh. Hope that helps!! Enjoy!
