How to Make Low Carb Beefy Pepper Jack Casserole in a Slow Cooker

One of our most popular recipes on the website is our Crock Pot Pepper Jack Chicken. We have been making this recipe for years! It came out of one of those times I often call “kitchen sink” moments. You know, those times where we need something for dinner and I just grab random ingredients from our pantry, fridge and freezer until something tastes good. Our Pepper Jack Chicken was a combination we stumbled upon and loved so much we made it a regular recipe in our house and eventually on the site.

So the other day I got to thinking about how a lot of our readers prefer ground beef recipes.Then I decided to convert our pepper jack chicken into a beefy casserole and my family raved about it! They say the beefy version even tops their beloved chicken recipe!

Our Crock Pot Beefy Pepper Jack Casserole is an easy low carb ground beef casserole that the whole family loves! Layers of ground beef, mushrooms, peppers, green beans and creamy pepper jack cheese make this recipe a go-to for family dinner.

Crock Pot Beefy Pepper Jack Casserole Notes

  • We like to use our Make Ahead Ground Beef (Crock Pot Version Here or Electric Pressure Cooker Version Here) to make this dish a quick prep recipe.
  • We have made this dish in our casserole crock and our 6 quart Ninja Multicooker. Both work great. The Ninja’s non-stick surface makes for a little easier clean up.
  • All slow cookers cook differently, so cooking times are always a basic guideline. Recipes should always be tested first in your own slow cooker and time adjusted as needed.
  • If you do not want to use fresh mushrooms, you can substitute them for a 4 oz can of mushrooms (drained) or leave them out completely.
  • We prefer to use frozen whole green beans in this recipe. You could use frozen cut or canned (drained) if you would like.

Ingredients

  • 2 lbs ground beef browned
  • 1 oz Envelope Au Jus Gravy Mix
  • 8 oz cream cheese softened in microwave (30-60 sec)
  • 8 oz fresh mushrooms washed and sliced
  • 10.8 oz whole green beans frozen
  • 1 bell pepper cut into bite sized pieces
  • salt and pepper to taste
  • 8 oz pepper jack cheese slices

Instructions

  • In a mixing bowl combine the browned ground beef with the gravy mix (do not add water).
  • Stir in cream cheese until smooth and then stir in mushrooms and set aside.
  • Place frozen green beans in the bottom of your crock pot and evenly cover with bell pepper.
  • Salt and pepper lightly and top with ground beef mixture.
  • Cook on high for 2 hours or low for 4 hours, adding cheese slices evenly over the top during the last 5-10 minutes of cooking.

    Just got this recipe in my email… The name caught my eye. Then the few ingredients needed, sparked my interest and then BOOM!! I had to taste test right away. OMG!! This was absolutely delicious and very easy!! Waiting on rest of family to try it……. The verdict is out!!!…. DEE LISH!!!! Thank you, Cris, for sharing your recipes with us. I love the fact you are doing everything out of your camper. GO RV LIFE!!!!
