This recipe is a big favorite in our house. We adapted this recipe from a casserole we found in Keto Gatherings, a new cookbook that is quickly becoming one of my favorites. This low carb side dish packs a lot of flavor into every bite. It is easy enough to throw together for a weeknight dinner and yet I wouldn’t hesitate to put it on a holiday table. So. Good.

- We love using our casserole crock to spread out the artichokes in the garlic butter, but you can use any 4-6 quart slow cooker.

Crock Pot Creamy Lemon Artichokes (Low Carb)
Ingredients
- 28 oz Artichokes Heart (2-14 oz cans), Drained and Chopped
- 1/4 cup butter (1/2 stick), melted
- 1 tbsp minced garlic
- juice of a lemon
- zest of a lemon optional
- 1 1/4 cup heavy cream
- 1 cup shredded Parmesan
- salt and pepper to taste
Instructions
- Place artichokes down in the bottom of your slow cooker
- Drizzle with butter and lemon juice and sprinkle on garlic and lemon zest. Salt and pepper to taste.
- Cook on high for 2 hours.
- Stir in cream and Parmesan and cook until warmed through and cheese melts.

Hi Gloria- I usually use whatever I have on hand. A medium or large lemon will work just fine. Enjoy!

A lemon. Who measures and weighs a single lemon! You won’t enjoy cooking if you obsess about the size of a single piece of fruit! It’s a great recipe!

Omygosh! I saw this earlier online and had to make it IMMEDIATELY! Thank Heaven I had all the ingredients! It is too delicious. Tender artichokes and the lemon garlic sauce is divine! This is so easy…Thank goodness I have a casserole slow cooker because I am going to take this to an Oscar Night Potluck for my vegetarian friend. She is gonna love it! I think I’m going to have to double it so we both get a good serving before the others get to the table! Thanks so much for this creative side dish!
