You guys know I love eating low carb. I feel like it has been the easiest and most sustainable diet change I have ever attempted to make and I find it very easy to stay on track. With that said, eating at parties and potlucks can be a challenge. Truth be told, it isn’t fun to feel like you can’t participate in all the food and fun like a normal person… So, I am always looking for ways to make some easy dishes that I can definitely enjoy without labeling it “diet food” to the rest of the party.

This low carb veggie tray is a great example. I can whip up all kinds of party dips that easily fit within the low carb lifestyle. However, crackers and chips are carb heavy so I am always looking for alternatives for my dips.

Vegetables Low in Carbs

Not all vegetables are low in carbs, however many are moderately low carb and can be a great substitution for crackers and chips at parties. Here are some vegetables to consider adding to your low carb vegetable platter:

  • Sliced Cucumbers
  • Cherry or Grape Tomatoes
  • Bell Peppers of Various Colors
  • Cauliflower
  • Broccoli
  • Radishes
  • Celery

Tips for Cutting Carbs Further

If you would like to cut carbs even further, consider cutting vegetables into smaller portions. It will feel like you are getting more, while eating less. Make everything truly bite-sized. Cut radishes and cherry tomatoes in half. Instead of full bell pepper slices, cut them in thirds or halves.
