We love our Instant Pot around here. And now that Mikey is helping us in the kitchen full time, we are working on sharing a lot more Instant Pot Recipes (Electric Pressure Cooker Recipes). Our Perfect Crock Pot Roast was an obvious choice to convert right away. It is childhood in a pot to Aunt Lou and I. It is a classic roast, onion, carrot and potato with gravy that is fork tender after only 60 minutes of pressure and only 90 minutes start to finish. Mom will flip when she hears that!
Perfect Instant Pot Roast Recipe

Ingredients for Perfect Instant Pot Roast
- 2-3 lb beef chuck roast
- 5-6 potatoes peeled and sliced into wedges
- 1 bag of baby carrots
- 2 medium onions quartered
- 2 pkgs brown gravy mix
- 2 cups water
How to Make the Perfect Pot Roast in an Electric Pressure Cooker
- Place beef roast down in a 6 quart Instant Pot or Electric Pressure Cooker.
- Top with veggies.
- Mix gravy mixes with water and pour on top.
- Secure lid and set lid to seal. Set on Manual with the warming feature off (press manual button twice on Instant Pot to turn warming off) for 60 minutes. (Note: It will take approximately 15 minutes for pot to reach full pressure before the 60 minute timer will start.)
- Let Instant Pot NATURALLY release (Do not immediately use quick release) for at least 15-20 minutes before quick releasing. I personally prefer to let it completely naturally release.
Notes on the Perfect Instant Pot Roast
- We used a 6 quart Instant Pot to make this recipe. Using an electric pressure cooker is a great convenience in the kitchen, but ALWAYS follow your manufacturer’s recommendations for safety.
- You can also make this in your crock pot or oven!
- If using a smaller pot, you may need to reduce the recipe to avoid overflow.
- DO NOT Quick Release this recipe immediately after cooking. Also, DO NOT EVER cover the vent of your electric pressure cooker.
