As you may have seen in our family travel vlog, we went to Texas for a month in our RV and cRocked our way to Galveston to San Antonio and Austin and then made our way back home (my mom was getting a little worried we might not come home for Christmas ;)!). So when we were thinking about what to cook up in our Camper Kitchen, we knew we wanted to try some Texas inspired dishes. So when I found a Texas-style Chili in one of my favorite low carb slow cooker cookbooks, I knew it was THE one to try… with a few tweaks for our taste.
Slow Cooker Texas Chili Recipe

Ingredients for Slow Cooker Texas Chili Recipe
- 3 lbs Beef Stew Meat
- 1 Tablespoon Minced Garlic (we used freeze dried)
- 1/4 Cup Chili Powder
- Red Pepper Flakes to taste
- 1 Tablespoon Oregano
- 1 Tablespoon Cumin
- 2 Cubes Beef Bouillon
- Salt and Pepper to Taste
- 14.5 oz Can of Beef Broth
- 1/2 Medium Onion- Chopped
- Garnish: Sour Cream, Lime and Avocado
How to Make Texas Chili in a Crock Pot
- Add all ingredients (except garnish) to a 6 quart slow cooker and mix well.
- Cook on low for 6-8 hours until tender.
- Serve with garnish.
Notes on Slow Cooker Texas Chili
- Recipe adapted from The Everyday Low Carb Slow Cooker Cookbook.
- Adjust level of red pepper flakes to make chili as hot or mild as you would like.
- I really enjoyed using my Instant Pot Gem Multicooker (note: it is not a pressure cooker) to cook this up in our camper kitchen because it both cooks a little less hot than some of my slow cookers AND it has a delay start feature that let’s me program when the slow cooker starts cooking.
- As with any of our recipes, calorie counts and nutritional information varies greatly depending on which products you choose to use when cooking this dish.
- All slow cookers cook differently, so cooking times are always a basic guideline and should always be tested first in your own slow cooker and time adjusted as needed.

UUUUUUUU, my friend are a very very very bad gurl. I fixed this recipe last week and it is AMAZING, Sooo AMAZING before i finished the last helping i fixed more. I doubled it! YEP! 6 lbs of beef 1 whole box of broth etc. etc.
I added instant rice as a side

Can turkey be used here instead of stew meat?
Hi Laura-
Turkey will cook significantly faster. I haven’t tried it, but my guess is it would taste very different but might still be a nice dish. Let us know if you try it.
