I am a potato girl. Growing up if I went to a steak house, my two sides were always, without fail, a baked potato and a baked sweet potato. I love loaded potato soup. I love Momma’s mashed potatoes. It’s not my fault really. I grew up in a very literal meat and potatoes family. Every meal had meat and every meal had some form of potatoes. Hi, my name is Lou, and I’m a potato lover.
These Creamy Ranch Crock Pot Potatoes sounded delicious. I mean, did you see the ingredients I listed?! I was drooling before I even got my first whiff of these amazing things…and they smell heavenly!
And even better yet, Ryder LOVED them! As I was putting them together, I let him sample them. Here lately we have been having a hard time getting him to eat much more than “EO’s” (Cheerios) because he has had another one of his fever episodes. So when I had him try these, and his response was “Mmmmm! Eat that!” I knew we had a winner for our house.
Creamy Ranch Crock Pot Potatoes
Peel and cut up 6 potatoes.
Then put them on to boil with water in a saucepan.
Boil them over medium-high heat for about 15-20 minutes…until they are tender.
Drain off the water and mash ’em up! Mix in the cream cheese, butter, ranch dressing mix and parsley.
Plop them over in your lightly greased slow cooker.
Cover and cook on low for 2-4 hours.
Serve it up and fall in love with this creamy goodness!
- 6 potatoes pealed and cut into large cubes
- ½ c cream cheese softened
- ¼ c butter softened
- 1 oz pkg of ranch dressing mix
- 1 t dried parley flakes
- Peel and cut up 6 potatoes
- Boil in a saucepan with water over medium-high heat for about 15-20 minutes, until tender
- Drain water and mash potatoes
- Mix in the cream cheese, butter, ranch dressing mix and parsley
- Spoon into a lightly greased slow cooker
- Cover and cook on low for 2-4 hours
