How to Make Bacon Broccoli Chicken in a Slow Cooker
Cris here. We have been on a broccoli kick around here ever since we made the Crock Pot Chicken Divan the other day. So today I tested out my new Crock Pot Bacon Broccoli Chicken Recipe on the family and they give it two big thumbs up!
Cheese, bacon and green onions pack a powerful flavor atop the chicken and broccoli. And, the amazing cream cheese butter sauce is incredible!
This is one of those low carb crock pot dishes that all of our family and friends LOVE. No one ever even thinks about it being low carb ;).
Notes on Crock Pot Bacon Broccoli Chicken
- We used our casserole crock to make this yummy dish. We love how it evenly cooks the tenders and makes dividing into portions a snap!
- If you desire a smoother sauce, whip cream cheese with dip mix in a mixer. Then slather on top instead of step 2 and 3. I prefer the convenience of not getting mixer out and find that mixing at the end is good enough for me.

Crock Pot Bacon Broccoli Chicken
Ingredients
- 2 lbs Chicken Tenderloins
- 16 oz Frozen Broccoli florets
- 8 oz Cream Cheese cubed
- 1 oz envelope Hidden Valley Chive Onion Dip Mix (Can use Ranch Dip Mix as substitute)
- 1/4 cup Butter cubed
- 6 slices Havarti Cheese
- 8 slices Crisp Bacon crumbled
- 2 Green Onions chopped (green parts only)
Instructions
- Place tenders and broccoli (frozen) in bottom of a casserole crock or 6 quart slow cooker.
- Season with dip mix and sprinkle with butter cubes.
- Dot with cream cheese.
- Cover and cook on low for 3-4 hours or until the tenders are cooked through.
- Stir to break up the cream cheese (See note if you desire a smoother butter sauce.)
- Place cheese slices evenly over top of chicken and broccoli, overlapping if needed.
- Sprinkle with bacon and onions.
- Cover until cheese melts.
- Serve in a bowl.

Have tried and really like this recipe. But a little much for just 2 people. Do you think all the crockpot ingredients minus the broccoli would freeze well. Then Thaw and put on top of broccoli for a couple hours? Or so you think it would turn to mush?

How did the fresh broccoli work?

Maybe it was just me, but fresh broccoli didn’t soften up the way my steamer broccoli/frozen broccoli does. That, and for whatever reason, it was like I got more out of the frozen bag. Maybe that’s because it spreads out and the fresh doesn’t break up as easily. If you had fresh broccoli, I think I’d recommend steaming it first – at least to get it soft. I made this at least once a month in 2020, and I’ve made it three times in the last month! The only time it wasn’t ideal was when I used fresh broccoli.

So, I didn’t have any Havarti cheese, or bacon on hand..and only half the amount of cream cheese, and only 2 chicken breast lol so I was worried it wouldn’t be as moist/tasty but boy was i wrong…..This recipe is SUPER DELICIOUSSSSS!!! I cant stop eating it lol…. I can only imagine what it taste like with the bacon and cheese! If I could give 10 stars I would!

IF you wanna whip the cream cheese and dip mix to make it smoother do you whip the butter too or still place that cubes on top of chicken and broccoli —-also can you use breasts instead of tenders?

I would probably keep the butter separate so it can cook down into the chicken and broccoli. You can use breasts but it may lengthen your cooking time. Enjoy!
