How to Make Bacon Cheeseburger Soup in a Slow Cooker
We shared this tried and true crock pot soup several years ago when we were making a lot of low carb recipes and while this soup definitely is low carb, however no one would ever describe this as anything but amazing. You can find our original take on the recipe here.

Crock Pot Bacon Cheeseburger Soup
Ingredients
- 5.5 cups Beef Broth
- .5 cup pickle juice
- 2 ribs celery chopped
- 1 carrot chopped
- 3 green onions chopped, divided
- 2 tablespoon fresh dill
- 2 lbs ground beef browned and drained
- 1 cup heavy cream
- 8 oz cream cheese very soft (we heated in microwave for 30 sec)
- 3 cups shredded cheddar cheese
- 8 slices bacon crisped and crumbled
- garnish: pickles, ketchup, mustard, additional cheese etc.
Instructions
- Pour broth, pickle juice, celery, carrot, dill, cooked ground beef, white parts of the green onion into a 6 quart slow cooker.
- Cook on low for 4-6 hours or until veggies are tender.
- Stir in cream cheese and cheddar cheese until melted.
- Add heavy cream and stir.
- Serve in bowls and top with bacon, the remaining green onion, pickles and additional garnish.

- Our original inspiration for this soup came from a Cheddar Cheese soup found in Easy Ketogenic Diet Slow Cooking.
- We used ourย Ninja Slow Cookerย to make this dish so that we could brown our meat in the unit before slow cooking. However, you can use a regular slow cooker and brown in a skillet ahead of time.
- You can use our Air Fryer Bacon method to fry your bacon for this soup.
