You guys know I have been so obsessed with that low carb bbq cola sauce we adapted from one of our favorite low carb cookbooks: Bacon and Butter. So much so that we have created several STAPLE recipes on our personal family meal rotation.

So, it was only a matter of time until we made Crock Pot BBQ Cola Chicken. Truth be told, we have been eating it in this family for months and I am just now getting around to getting it on the blog ;). I love making a big batch of this up for dinner and then freezing leftovers for easy salads and wraps on busy days.

How to Make Low Carb BBQ Cola Chicken in a Slow Cooker

This recipe is super simple. You just throw your chicken in a 6 quart slow cooker and season with salt. Then you mix together the remaining ingredients into a sauce and pour on top. Cook on low for 4-6 hours until the chicken is shreddable. If you want the sauce to be thick, remove the chicken and cook the sauce down on the stove or in a browning slow cooker on the saute feature until the sauce reduces and thickens up, then return chicken after you shred it. This chicken is great as a main on its own or on salads and in sandwiches and wraps.

Notes on Crock Pot BBQ Cola Chicken (Low Carb)

  • This recipe features our very favorite low carb bbq cola sauce we adapted from one of our favorite low carb cookbooks: Bacon and Butter.
  • If you are looking for other low carb recipes, you can find them all here.
  • We like to use boneless skinless thighs in this recipe. You can use chicken breasts, but they may cook a little faster.
  • We like to use our multicookers (like the Ninja) to use the saute feature to reduce the sauce at the end. However, if you are using a traditional 6 quart slow cooker, you can just heat your sauce in a sauce pan on the stove instead.
  • As with any of our recipes, carb counts, calorie counts and nutritional information varies greatly depending on which products you choose to use when cooking this dish.
  • All slow cookers cook differently, so cooking times are always a basic guideline and should always be tested first in your own slow cooker and time adjusted as needed.

Crock Pot BBQ Cola Chicken (Low Carb)

Ingredients

  • 1 tablespoon butter melted
  • 1/2 cup onion finely chopped
  • 1 1/2 tablespoon minced garlic
  • 1 1/4 cups Coke Zero
  • 3/4 cup tomato paste
  • 1/2 cup water
  • 1 tablespoon Worcestershire Sauce
  • 3 tablespoon mustard
  • 1 teaspoon cajun seasoning
  • 1 teaspoon liquid smoke
  • 1/2 teaspoon paprika
  • 1 tablespoon cumin
  • 1/2 teaspoon pepper
  • 3 lbs boneless skinless chicken
  • salt to taste

Instructions

  • Place Chicken in a 6 quart slow cooker and salt well.
  • In a bowl, mix together remaining ingredients and pour over top of chicken.
  • Cook on low for 4-6 hours or until chicken is shreddable.
  • Remove chicken from slow cooker and shred in a mixer OR with two forks.
  • If a thicker sauce is desired, cook juices at a simmer until sauce reduces to thickness desired.
  • Return chicken to sauce and stir well.

    how many carbs per serving and how many servings is this?

      Hi Tammy-
      It will greatly depend on the tomato paste you choose to use. Tomato products vary greatly in carb counts.
