I just love this stew. It is a great dish for a weeknight meal or holiday. I made it for Christmas this year and a couple times since then with leftover ham. Everyone loves it so much, this has become my go-to leftover ham recipe. The idea for this dish came about when we made our Crock Pot Cabbage, Green Beans and Tomatoes the other day and we KNEW we were going to try that combination to create some other dishes. This recipe definitely did NOT disappoint!

Our Crock Pot Ham Stew is a flavorful one pot meal you can make with leftover ham. The smoky ham flavor cooks into the cabbage, tomatoes and green beans to create a delicious low carb stew.

Crock Pot Ham Stew Notes

  • You can use as much or as little ham as desired. We like to use at least 3 cups to make this a one pot meal.
  • If you are eating low carb, make sure to check your ham carb counts. Some varieties have added sugar, while you can find others that do not contain the extra carbs.
  • One of the major flavor contributors to this dish is the diced tomatoes flavored with oregano, basil and garlic. Several brands offer this option, but if you cannot find it, you can always add those spices to the dish yourself. Just add 1/2 tsp of each and it should do the trick.
  • We used a small head of cabbage (4 to 5 cups of chopped cabbage). You can use more if you want, just make sure to stir as the cabbage cooks down so that it will cook evenly.
  • All slow cookers cook differently, so cooking times are always a basic guideline. Recipes should always be tested first in your own slow cooker and time adjusted as needed.

Ingredients

  • 4 cups cabbage chopped (small head)
  • 14.5 oz Diced Tomatoes with Basil, Oregano and Garlic do not drain
  • 14.5 oz Green Beans We used Italian Cut. Do not drain
  • 3 cups ham cut into chunks (Can use more or less as desired)
  • 1/2 cup Butter
  • salt and pepper to taste

Instructions

  • Place cabbage in your 6 quart slow cooker.
  • Top with tomatoes, green beans, ham and butter.
  • Season with salt and pepper to taste.
  • Cook on high for 4-6 hours or low for 6-8, stirring occasionally as the cabbage cooks down.

    This was so simple, but so good. I’ve never cooked cabbage with tomatoes before, but I loved it. (I used fresh green beans only because I love them, and used the instant pot.)

    This tasted great, much better than similar recipes that I have tried. I think the diced tomatoes with basil, oregano and garlic makes the difference. I added some leftover cooked rice which worked out very well. Easy, convenient and tasty way of using up leftovers – ham, cabbage and/or rice!

    I made this a month ago following yer exact recipe . Ate it all in 3 days straight and loved it .
    One month later , today- bought ingredients gonna make it again. Forgot to buy a can of green beans so gonna try using frozen, an maybe a can of chicken broth ….
