When I was looking through Gooseberry Patch’s 303 Simple & Satisfying Recipesย for recipes to make this week, this Crock Pot Provincial Chicken popped out at me. Easy, veggies included and I knew it was going to taste great. I was right! My family loved it and so will yours!

Crock Pot Provincial Chicken

Ingredients forย Crock Pot Provincial Chicken

  • 2 lbs boneless, skinless chicken, cubed
  • 2 15 oz cans diced tomatoes
  • 2 zucchini, diced
  • 10.5 oz can cream of chicken
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon dried, minced onion
  • 2 tablespoon dried parsley
  • 1 teaspoon dried basil
  • 1 cup shredded Cheddar cheese
  • 1/2 cup sour cream
  • cooked bowtie pasta

How to Make Provincial Chicken in a Crock Pot

  1. Mix together your cubed chicken, tomatoes, zucchini, soup, vinegar, onion and spices in your 6-quart crock pot (I used Corky, myย Hamilton Beach Multi-Quart Slow Cooker)
  2. Cover and cook on low for 4 hours or high for 2 hours
  3. If desired, add in your cheese and sour cream and cook for an additional 15 minutes
  4. Serve over your cooked pasta

Crock Pot Provincial Chicken Notes

  • Can I tell you a secret? I forgot to add in the sour cream and cheese when I made this! It is really good without it, but the sour cream and cheese are awesome additions! So whichever way you make it, the flavors pop!
  • From my two-year-old to my husband, all four of us loved this flavorful recipe. As Michael said, this is a meal most people would pay high dollar for at a restaurant (and you can make it at home for a fraction of the price!).
  • In a hurry, use chicken tenders so you have less cutting to do!
  • If you need a longer cook time, you can use chicken breasts and leave them whole until they are done cooking. Once they are cooked, you can cut them into bite size pieces.
  • As with any of our recipes, calorie counts and nutritional information varies greatly depending on which products you choose to use when cooking this dish.
  • All slow cookers cook differently, so cooking times are always a basic guideline and shouldย always be tested first in your own slow cooker and time adjusted as needed.

    I made this today. It is good but I feel like it needs salt or spices or something more. I may try it again and use cream of celery or mushroom soup instead. Or maybe Rotel with green chiliโ€™s instead of regular diced tomatoes. Either way itโ€™s still a good recipe. Maybe adding some garlic or Italian seasoning would make the flavor pop more. Thank you for sharing this recipe.

  2. If I use the whole breasts for a longer cooking time, what happens to the zucchini? Does it turn to mush?

      Hi Pat!

      The original recipe actually calls for cooking it with whole chicken breasts (and cutting up after cooking), so the zucchini should be fine. Even with leaving the chicken breasts whole, you won’t be cooking this 8 hours because that would dry out your chicken. Hope that helps. Enjoy!
