We usually cook up at least two crockpot recipes a week here at the James’ house. This momma is tired by the time the work day is done, so having our main dish waiting for me when I wrap things up for the day means all I have to do is make the sides and dinner is served…aka we actually get a good home cooked meal!

I usually make one up on Sunday and another on Monday. Then we alternate leftovers for the rest of the week! Mommy score!

Monday’s meal was Crock Pot Salsa Meatloaf andย will definitely be a repeat around here.

I threw it together the night before, covered it and put it in the fridge, slid it in the crock pot the next morning, turned it on low and it was ready and waiting by the end of my work day!

Crock Pot Salsa Meatloaf

All you have to do is mix together your ground beef, eggs, oats, ketchup and salsa. The recipe says to shape it into a loaf…but as luck would have it, I happened to mix everything together in a bowl that made it into a round loaf that fit perfectly in the bottom of my crock pot! Can’t beat that!

Anyway, back to the Crock Pot Salsa Meatloaf…like I said, I made it the night before to save time in the morning (which was good since I overslept this morning!), so if you are doing the same…slide your loaf (however you shape it) onto a plate, cover and place in the fridge for the night. If you are not making it ahead of time, place in a crockpot sprayed with cooking spray. Cover and set on low for 8 hours.

Crock Pot Salsa Meatloaf Ingredients

  • 2 lbs ground beef
  • 2 eggs beaten
  • 1 c . oats uncooked
  • 1/2 c . ketchup
  • 1 1/2 c . mild salsa

Directions for How to Make Crock Pot Salsa Meatloaf

  1. Mix together all ingredients
  2. Shape into loaf
  3. Spray crockpot with cooking spray
  4. Place loaf in crockpot
  5. Cover and cook on low 8 hours

Crock Pot Salsa Meatloaf Notes

A few notes…

  • I used a 2.25 lb package of ground beef, and 1 1/4 cups of oats. The meat came in a package that size, so I figured we would just try it. I’m not sure if it was the extra meat or why, but it just seemed to need extra oats to set up. So I would suggest starting with the 1 cup and add as needed.
  • Lastly, I didn’t turn it off right at the 8 hour mark, and I should have. It was perfect at 8 hours! But I got distracted and let it go the full 10 hours and ended up with burnt edges. Now if my Dad would have been around, he would have been in heaven…he says it doesn’t taste good unless the edges are burnt. ๐Ÿ™‚

  1. I really want to try this, it sounds so good. No liquid is added at the beginning, right? I know it will make juices as it cooks.
