We love mac and cheese around here! And we love spaghetti squash… and how easy it is to make spaghetti squash in the slow cooker! So I got to thinking that it might be fun to make a spaghetti squash and cheese recipe. So I took one of our most popular mac and cheese recipes and altered it. The results are a cheese lover’s dream! Note: This is an extremely cheesy side dish, so if you do not want it as cheesy, you may want to reduce the cheese you add at the end.

Shopping List for Crock Pot Spaghetti Squash and Cheese

  • 2 Spaghetti Squash- Washed
  • 1 Cup Chicken Broth
  • Salt and Pepper to Taste
  • 2 Cups Shredded Cheddar Cheese
  • 2 Cups Shredded Mozzarella Cheese
  • 1 Cup Shredded Parmesan Cheese
  • 1/3 Cup Heavy Cream

  • This is an extremely cheesy side dish, so if you do not want it as cheesy, you may want to reduce the cheese you add at the end.
  • You can use any 6-8 quart slow cooker to make this dish.

Ingredients

  • 2 Spaghetti Squash washed
  • 1 Cup Chicken Broth
  • Salt and Pepper to taste
  • 2 Cups Shredded Cheddar Cheese
  • 2 Cups Shredded Mozzarella Cheese
  • 1 Cup Shredded Parmesan Cheese
  • 1/3 Cup Heavy Cream

Instructions

  • Pour broth in the bottom of a 6 quart slow cooker.
  • Cut squash in halves, scoop out seeds with a spoon and pierce halves with a knife 5 or 6 times.
  • Salt and pepper the inside of each half and place cut side down into broth.
  • Cook on high for 4 hours.
  • Carefully remove halves from slow cooker and cool for a few minutes. Then hold with a thick kitchen towel to scoop out squash . Throw away outer skin and return scooped out portion it to the slow cooker.
  • Add cheeses and stir well.
  • Replace lid and cook on high for 5-10 min or until cheese melts.
  • Stir in heavy cream and taste for seasoning. Add additional salt and pepper if desired.

    Does this still have the “classic” spaghetti squash texture? Little crisp? or does it soften more in the crockpot?

    I made this last night but modified it to use the Ninja foodi pressure cooker function to cook the spaghetti squash. It was quick and DELICIOUS!!! I will add this to my frequent recipes.

    I have never used a spaghetti squash…….would this recipe work using sliced yellow squash??
