Folks, today I am going to share with you a super easy answer to the question, “How to freeze corn?” The farthest back origin of this recipe that I know is my Gramma’s neighbor, Tony I wish I would have asked her where she got the recipe. I’m sure there is a good story. I may be partial, but this recipe from one of the best gardeners I have ever met is quite possibly the best recipe for freezer corn ever. I know it has been tried and true for at least 3 generations, because it is that yummy!
Ryder has been showing quite a bit of interest in cooking this year. He wanted to learn how to do make this recipe and help. Well, let me tell ya folks, he was a CHAMP! Since we usually do about 30-40 bags a year, we have 2 microwaves going at once. Ryder manned one microwave while I manned another, and Michael cut the corn off the 10 dozen cobs we had purchased. It was so much fun! If you happen to ever meet Ryder and want to check me, go ahead and ask him how to do this. My 8 year old can tell you everything you need to do for this recipe. I might be a proud momma. 😉
What You Will Need
Ingredients Needed
- 2 cups of fresh corn cut off of the cob
- 1/4 cup of water
- 2 tablespoons of butter
Equipment Needed
- Sharp Knife (If you will be working up a large amount of bags of corn, it is very helpful to have an electric knife.)
- 2 to 4 9×13 baking dishes (If you are working up a few bags of freezer corn, 2 pans will suffice. However, if you are working up many bags, I would recommend 4 pans.)
- Measuring cups
- (2) 1.5 or 2 quart glass bowls
- Large spoon
- Serving spoon
- Quart size freezer bags
- Marker
- Baking sheet pan
- Microwave
Time Needed Per Bag
- Prep time: 5 minutes
- Cooking Time: 6 minutes
- Cooling Time: 15 minutes

How to Freeze Corn

Instructions
- Schuck your corn and remove all the silks
- Using a sharp knife or electric knife, cut the corn off your cobs letting it fall into a 9×13 dish
- Measure 2 cups of corn into a 1.5 or 2 quart glass bowl
- Pour your water into your bowl and place your butter on top of your corn in the center
- Place your bowl in the microwave and cook for 3 minutes
- Remove the bowl with oven mits and stir your corn well
- Place your bowl back in the microwave and cook for an additional 3 minutes
- Spread your corn in a 9×13 pan to cool, approximately 15 minutes
- Once cooled, put 2 cups of corn in a freezer bag labeled with the date and press all the air out of the bag before sealing
- Gently move the corn in the bag so the bag will lay flat and place on a baking sheet (If doing multiple bags, you can stack the bags on the baking sheet putting the bottoms of the bags toward the outer edges with the tops of the bags overlapping in the middle)
- Place the baking sheet in the freezer (once bags are froze, you can remove the baking sheet)
- To fix at a later date, put your corn in a medium pot and heat over medium-high heat until it is heated through
