How to Make Sausage, Green Beans and Potatoes in an Electric Pressure Cooker

Youtube video

Aunt Lou here.

Growing up, I was in our church’s bell choir. So every Wednesday, I would go to my friend’s house. Her mom had a stove-top pressure cooker. That was the very first time I had this recipe. So, once I started trying to make recipes in my Instant Pot, I knew I had to make this dish. Karen, this one’s for you! Thank you for the countless times you fed me wonderful meals!

Ingredients You Will Need

  • 2 pkgs of traditional rope turkey sausage cut into half inch slices
  • 6-8 potatoes peeled and cubed
  • 4 cans of green beans
  • 1 small onion chopped
  • 2 cups water
  • salt & pepper to taste

Instant Pot Sausage, Green Beans and Potatoes Notes

  • If you would rather make this in your crock pot, you can find the recipe here: Crock Pot Sausage, Green Beans and Potatoes.
  • We used a 6 quart Instant Pot to make this recipe. Using an electric pressure cooker is a great convenience in the kitchen, but ALWAYS follow your manufacturerโ€™s recommendations for safety.
  • If using a smaller pot, you may need to reduce the recipe to avoid overflow.
  • DO NOT Quick Release this recipe immediately after cooking. Also, DO NOT EVER cover the vent of your electric pressure cooker.

  • As with any of our recipes, carb counts, calorie counts and nutritional information varies greatly. As a result, your nutritional content depends on which products you choose to use when cooking this dish. The auto-calculation is just an automated estimate and should NOT be used for specific dietary needs.
  • Finally, all electric pressure cookers cook differently, so cooking times are always a basic guideline. Recipes should always be tested first in your own electric pressure cooker and time adjusted as needed.

Hey y’all something that wasn’t mentioned – whether you make this in the IP, slow cooker or on the stove top – y’all better have some cornbread ready to sop up the ‘liquor* and don’t leave any of it behind bc its got lots of flavor too!

The meal turned out great. The beans were a little soft, so I think I will fold them in after cooking the next time. Hard to stop eating it.

  5. Can I used stew beef instead of sausage? Should I cook the beef first?

    1. 5 stars
      Hi Thomas!

I haven’t tried this with stew beef, but love the idea! With the beef cut into the small cubes, it should be fine to add it without pre-cooking. If you give it a try, let me know how it goes!

  6. When it calls for one onion, can you tell me what kind of onion that means? I feel like I never know what kind of onion to buy for a recipe like this.
    Thanks!

A yellow onion is what we usually use Debbie. Enjoy!

  7. What changes would you make if you were to use the baby red potatoes?

    1. 5 stars
      Hi Paige!

I haven’t tried this recipe with baby reds. We test all the recipes before we post them to make sure our reader’s have the best chance at success, so I don’t want to steer your wrong. Baby reds are a softer potato, so that would affect the cooking time. If you give it a try, let me know how it goes!

    2. Hey Paige, Aunt Lou! I can tell you that baby red potatoes are FABulous in this! Just wash ’em off and quarter, if larger reds you might have to cut smaller, and put ’em in! Cook time same. ๐Ÿ™‚
Also those baby reds work well in the crock pot or stove top too! hehehehee

If I wanted to half this recipe, would that be an issue?

    1. 5 stars
      Hi Stephanie!

I haven’t tried halving this recipe. You will probably need to reduce the cooking time since there won’t be as much to cook. If you give it a try, let me know how it goes!

Thank you so much for sharing Kimberly! I am sure this will be helpful to others who would like to use fresh green beans! I’m so glad you enjoyed it!

This recipe is a keeper! Hubby liked it so much, he printed out another copy, in case I lost my copy. I made the crock pot version, following the recipe as written, and it turned out great! One of my favorite things: After cooking the green beans all day with the sausage, the green beans reminded me of those my mom cooked (Southern-style?). The longer they cooked, the darker, softer, and tastier they became. Yum! I am so glad I discovered your site.

      Hi Eileen!

I’m so glad you like this recipe! It is one of my personal favorites (in the crock pot and instant pot)! And I’m with you, I love some good ol’ fashioned green beans cooked low and slow. Gramma used to cook green beans like that all the time. Every time I smell them, I am transported back to her kitchen when I was a kid. Thanks for letting us know you like the recipe and for your kind words!

  11. What is the reason for turning off the warming feature? I didn’t even know there was a warming feature, nor have I seen it mentioned in recipes for the IP. Is that feature available in the original model that first came out…..that’s what I have.

    1. 5 stars
      Hi Vicki!

We like to turn off the warming feature so that the food does not continue cooking and become overcooked. It is a feature that turns on automatically, if you do not push the manual button twice to make it not come on automatically. It is on all the Instant Pot models.

This looks delicious!! May I ask you what brand and type of green beans you use? Thanks so much

    1. 5 stars
      Hi Wendy!
We use whatever brand is on sale, however, if you want the big flat green beans, we buy Italian-Style green beans. They remind us of the garden green beans we used to grow as kids. Hope that helps!

  13. What size can of green beans and are they to Drained?

    1. 5 stars
      Hi Gayla!

Just 4 regular 14.5 oz cans of green beans. Do not drain. Just pour them in.

      Enjoy!
      Aunt Lou

  14. Is there enough liquid to do this in the IP? Another question, I don’t lie using canned veggies can I use frozen green beans?

    1. 5 stars
      Hi Mary!

Ours turned out well. If you use frozen veggies, then you will want to add more liquid.

      Enjoy!
