Parmesan Crock Pot Italian Chicken
How easy is it? You could throw this together in under 5 minutes easy…I didn’t time myself, but even this recipe-prep challenged girl probably had it together in 2 minutes.
Yep. It is that easy! Even better? It is SO good that no one will have any idea that you didn’t have to spend forever putting it together…nor will they care once they take a taste!
Parmesan Crock Pot Italian Chicken
Ingredients
- 2½ lbs boneless skinless chicken breasts
- 1½ oz pkg spaghetti sauce mix
- 14½ oz can diced tomatoes undrained
- 8 oz can tomato sauce
- cooked penne pasta
- Garnish: grated Parmesan cheese
Instructions
- Spray your crock pot with cooking spray
- Place your chicken in your crock pot
- Sprinkle your spaghetti sauce mix evenly over your chicken
- Pour your tomatoes and tomato sauce over your chicken
- Cover and cook on low for 4-5 hours
- Serve it up over your cooked penne with a sprinkling of Parmesan cheese
Slow Cooker Recommendation
Here comes a shocker. I used Sir Hamilton (my Hamilton Beach Programmable Insulated Slow Cooker). If I am a lazy cook, I am even lazier about clean up. Who needs to scrub a dish when you have a wonderful slow cooker that cleans up in a snap! Your favorite 5-6 slow cooker will work too.

I did this adding bell pepper & onion, used a low salt maranara (sp) & no salt diced Italian spiced tomatoes. Will DO AGAIN, possibly add a little red pepper flakes.
How would you change this for two, it is just me and my wife, it is so hard to get good recipes for two, they are all 4 -6 or 6-8. It looks good, would like to try it.

It is just me and Uncle Michael eating adult portions, but he eats enough to count as two. 😉 We love having leftovers so I don’t have to cook every single night! If you would prefer to not have leftovers, you might try making a freezer packet with half of the recipe. I would prepare the entire recipe to just before you cook it, then divide it in half. Place half in your crock pot and cook per the recipe. Place the other half in a freezer bag, press out all the air, label with a marker what the recipe is and the date it was prepared and lay flat in your freezer. Then you will already have another smaller portion ready to go for another time. Please note that I have NOT tried this recipe as a freezer recipe yet, but with the ingredients in it, I would guess it would freeze well. (Don’t freeze the penne. 😉 ) Hope this helps! what is packaged spaghetti sauce? Can you use jar?
