Recently Sargento® asked me to participate in the Chopped at Home Challenge.
The challenge is to come up with a great dish using the following ingredients:
- Sargento Chef Blends 4 State Cheddar Shredded Cheese
- Kale
- Oyster Crackers
- Bacon
And, anything else that I wanted to make this dish great as long as the dish highlighted the main ingredients– just like the show.
So, I got to thinking. The ingredient list immediately made me think of one of our favorite soups: Zuppa Toscana.
So, with that in mind I started thinking and then I realized that this post was going to go live on my grandma’s birthday… and instantly I KNEW what I wanted to make.
Growing up I have tons of food memories around my grandma. Everything from the raisin bran she would eat in the mornings to the frozen hot dogs she would keep in the freezer in case us kids ever wanted her to boil us up one. One of those memories is her love for Bean Bacon Soup. She would often make bowls of it to go with an oeey gooey grilled cheese for lunchtime.
So with Zuppa Toscana and grandma’s love for Bean Bacon Soup as my inspiration, I got to work in the kitchen. The results were fantastic! The family raved about it and it is now on our regular rotation of soups. I hope you will give it a try and just know you will enjoy it as much as we do!
Crock Pot Bean Bacon Soup Notes:
- For this recipe, I highly recommend our all-in-one slow cooker that has a browning setting to allow you to brown your sausage and bacon IN the crock pot. It works perfect for this soup and I LOVE how easy the non-stick surface cleans up! However, this soup will do well in any 5-6 qt slow cooker.

Crock Pot Bean Bacon Soup Recipe
Crock Pot Bean Bacon Soup
Ingredients
- 1 lb Sausage crumbled
- 10 Slices Bacon Cut into bite-sized pieces
- 4 Cups Beef Broth
- 45 oz Northern Beans (3-15 oz cans) Drained and rinsed
- 2 Cups Kale Cut into bite-sized pieces
- 1 Cup Oyster Crackers
- 2 Cups Sargento Chef Blends 4 State Cheddar Shredded Cheese
Instructions
- Brown sausage and bacon in a skillet until fully cooked. Drain and add to slow cooker.
- Pour in broth and beans and cook on low for 4-6 hours.
- 10 minutes before serving, stir in kale.
- Ladle into bowls and top with oyster crackers and plenty of cheese.
