We love our low carb Crock Pot Beefy Vegetable Soup so much around here it was only a matter of time before we converted it into a recipe we could whip up in our Instant Pot, Ninja Foodi and Crock Pot Express. I love having the flexibility of slow cooking a recipe most of the day or throwing it together in minutes in my electric pressure cookers. So we now have an Electric Pressure Cooker Beef Vegetable Soup too!

  • Place ground beef in a 6 quart electric pressure cooker and pour 1 cup of broth on top.
  • Break beef up as much as you can with a wooden spoon or beef chopper.
  • Place under high pressure and cook for 5 minutes, then quick release.
  • Break ground beef up again and add all remaining ingredients except kale and garnish.
  • Place under high pressure for 15 minutes and naturally release for 15 minutes.
  • Stir in kale and serve with garnish.

    This recipe far exceeded my expectations, absolutely delicious! By the way, I used curly kale. I think next time I might use half ground beef and half Italian sausage.
