I am always on the lookout for good recipes. I get really excited when I find one that makes me say yum and makes Michael’s eyes light up when I tell him about it. (Food is seriously the easiest way to get a reaction out of my husband…which is good for me since I am always making up yummy recipes for ya’ll to try with me!)

This Crock Pot Cheesy Ham Hashbrown Casserole is great for breakfast, lunch or dinner!

Crock Pot Cheesy Ham Hashbrown Casserole

Like I said, I found this Crock Pot Cheesy Ham Hashbrown Casserole recipe over on The Backroad Life, except it was for the oven. (Click here for the oven instructions.) Stacy was generous enough to let me try it out in my crock pot and share it with you here!

Ingredients for Crock Pot Cheesy Ham Hashbrown Casserole

30 oz  shredded hashbrown
16 oz diced ham
2 c shredded cheddar cheese
10.5 oz can cream of chicken soup
16 oz sour cream
1/4 cup onion diced
1.5 sticks of butter melted, divided
pepper to taste
2-3 cups cornflakes (if you want a crunchier topping use 3 cups corn flakes)

How to make Cheesy Ham Hashbrown Casserole in a Slow Cooker

Mix together your hashbrowns, ham, cheese, soup, sour cream, onion, 1 stick of melted butter and pepper
Spray your crock pot with cooking spray
Pour your hashbrown mixture in your crock pot and spread out evenly
Cover and cook on high for 3-5 hours
Once your casserole is done, mix together your corn flakes and your remaining 1/2 stick of melted butter
Spread your mixture out on a cookie sheet and broil (on high if your oven has a high/low setting) for 30second
Stir well and broil for another 30 seconds
If it is still not crispy as you want, you can do another 30 seconds in the broiler
Spread your crispy corn flake topping over casserole and enjoy!

Crock Pot Cheesy Ham Hashbrown Casserole Notes

  • Now you might be thinking, “But this has a corn flake topping! How will I get my crunch?!” Never fear! We have you covered! I, too, love a good crunchy corn flake topping! So here is what you do, mix up your corn flakes and butter in a bowl. Spread them out on cookie sheet and broil on hi (if your broiler has a hi/low setting) for about 30 seconds. Then give them a good stir and broil for about 30 more seconds. If they are crispy, then you’re done! If not, give it another 30 seconds.
  • If you have never used your broiler, you might think those times seem extremely short. No sir! If you have ever used your broiler, then you know not to take your eye off of ANYTHING you put in your broiler. Things in the broiler are very needy you see…they want all your attention. If you do not give them your undivided attention, then their friend the smoke detector will get your attention for them. 😉
  • If you don’t have a broiler, you can take the corn flake and butter mixture and put them in a large skillet over medium/high heat to give them a quick crisp.
  • So, as you can guess, I made this Crock Pot Cheesy Ham Hashbrown Casserole in my Casserole Crock Pot. It filled this baby up, so if you don’t have one yet, I would use a 6-quart slow cooker.
  • As with any of our recipes, calorie counts and nutritional information varies greatly depending on which products you choose to use when cooking this dish.
  • All slow cookers cook differently, so cooking times are always a basic guideline and should always be tested first in your own slow cooker and time adjusted as needed.

Ingredients

  • 30 oz shredded hashbrown
  • 16 oz diced ham
