This dish is one of my favorite new low carb recipes on the site. The flavors in this dish are so unique and so yummy! It is an easy one-pot meal and even though it is low carb, that cheesy topping is so delicious no one would dare call this diet food!

Our Crock Pot Creamy Asparagus Chicken (Low Carb) Recipe is a super simple casserole with an incredible creamy cheesy topping.

Ingredients

Instructions

  • Melt butter in a skillet or in your multicooker on the saute feature and saute mushrooms with garlic until mushrooms are browned and tender.
  • If using a multicooker, remove mushrooms and set aside.
  • Place chicken in the bottom of your slow cooker and season with salt and pepper.
  • Place asparagus spears over top of chicken and spread the mushrooms over the top.
  • In a bowl, mix together cream cheese, mayo and Parmesan.
  • Spread the mixture over the top of the mushrooms and cover with the lid.
  • Cook on low for 4-6 hours.

  1. We made this last night and the flavor was amazing. We did think the sauce was runny. Should I have drained the mushrooms from the butter? We are wondering if the butter was giving it the runnier consistency?

    I made this and really enjoyed it. I added fresh thyme, sage, oregano and rosemary which really went well with the creamy and savory flavors you have put together. I also added some fresh corn kernels. Definitely adding this recipe to my repertoire. Thanks!!

      You could certainly give it a try. However, we really couldn’t speak to how it will taste since we haven’t tried it. Let us know how it goes.

  8. Hi Chris, I have the chicken asparagus recipe in my crock pot. It smells so good. Canโ€™t wait to try it. I was wondering why you donโ€™t clean the fat off the chicken before you put it in the crock pot? Especially chicken thighs. Enjoy your recipes.

      I hope you enjoy it as much as we do! We don’t trim the fat off our chicken due to personal preference. We enjoy the flavor it adds and it fits within our Low Carb High Fat (LCHF) diet. Feel free to trim yours if you prefer a leaner meat.Enjoy!!

    Absolutely delicious and going into regular rotation. I plan to try it with chopped broccoli when asparagus gets too expensive. Also need to increase the amounts of those delicious mushrooms!

      Servings are always a flexible thing with home cooking. Our family gets about 8 portions out of this dish. I typically just cut (or scoop) the casserole into 8 portions. Hope that helps!
