This dish is one of my favorite new low carb recipes on the site. The flavors in this dish are so unique and so yummy! It is an easy one-pot meal and even though it is low carb, that cheesy topping is so delicious no one would dare call this diet food!

  • We love making this recipe in our Casserole Crock and our 6 quart slow cookers, especially our multicookers because they allow us to saute the mushrooms in the same pot that we use to slow cook.
  • If you aren’t sure how to properly trim asparagus watch the beginning of the video to learn how to snap off the ends for perfectly tender asparagus every time.

Ingredients

  • 4 lbs Boneless, Skinless Chicken We use thighs
  • Salt and Pepper To taste
  • 1 lb Asparagus Washed and trimmed
  • 1 tablespoon Garlic
  • 1/4 cup Butter
  • 8 oz sliced fresh mushrooms
  • 1/2 cup Mayo
  • 8 oz Cream Cheese Very soft (we microwave 30 sec)
  • 1 cup Shredded Parmesan

Instructions

  • Melt butter in a skillet or in your multicooker on the saute feature and saute mushrooms with garlic until mushrooms are browned and tender.
  • If using a multicooker, remove mushrooms and set aside.
  • Place chicken in the bottom of your slow cooker and season with salt and pepper.
  • Place asparagus spears over top of chicken and spread the mushrooms over the top.
  • In a bowl, mix together cream cheese, mayo and Parmesan.
  • Spread the mixture over the top of the mushrooms and cover with the lid.
  • Cook on low for 4-6 hours.

    I made this and really enjoyed it. I added fresh thyme, sage, oregano and rosemary which really went well with the creamy and savory flavors you have put together. I also added some fresh corn kernels. Definitely adding this recipe to my repertoire. Thanks!!

    What a great dish! Wife prepared this last night and placed it in the refrigerator overnight. She turned the crock on this morning and it was all ready by lunchtime! Worth making over and over!

    is the carb count at the end the correct i am a diabetic and i try to keep track of what i have for a carb count.. i am really wanting to try this. it looks good

      The nutritional values are calculated with an automated program. We highly recommend looking at the nutritional values on the specific ingredients you are using to calculate the precise nutritional values for what you eat. Hope this helps!

    Hi Chris, I have the chicken asparagus recipe in my crock pot. It smells so good. Can’t wait to try it. I was wondering why you don’t clean the fat off the chicken before you put it in the crock pot? Especially chicken thighs. Enjoy your recipes.

      Hi Diane-
      I hope you enjoy it as much as we do! We don’t trim the fat off our chicken due to personal preference. We enjoy the flavor it adds and it fits within our Low Carb High Fat (LCHF) diet. Feel free to trim yours if you prefer a leaner meat.Enjoy!!

    This looks amazing! I’m making this tomorrow in my cassole Crock-pot. I need to replace my 6 quart that died on me few months back.. Now that Oregon is getting some rain, a much needed warm tummy meal is in order, and this fits the bill perfectly! Thanks for sharing, and I can’t wait to try the next low carb creation!

    Absolutely delicious and going into regular rotation. I plan to try it with chopped broccoli when asparagus gets too expensive. Also need to increase the amounts of those delicious mushrooms!

      Servings are always a flexible thing with home cooking. Our family gets about 8 portions out of this dish. I typically just cut (or scoop) the casserole into 8 portions. Hope that helps!
