One of my favorite corn recipes is our Creamy Crock Pot Corn. So I got to wondering, can I make this in an electric pressure cooker? The answer is a resounding YES! And don’t let the ingredients scare you because you think it is too weird. I shared some with a friend of mine. She said she wasn’t sure about it, but her and her family including a teenage boy that said, “I looked and thought for sure I wouldn’t like it, but I tried it anyway, and it was great!” So, give it a try, and I bet you and your friends and family will be saying the same thing!

Instructions

  • Place your corn in your 6-quart Instant Pot and cover with water, stir to make sure no corn is stuck on bottom
  • Seal and cook on manual, high for 5 minutes
  • Quick release and strain off water
  • Put together all your ingredients and stir until completely combined

      I haven’t tried this recipe with fresh corn. Without testing it first, I can’t say what the difference in timing would be. If you give it a try, let me know how it goes.

    Iโ€™m going to make this for thanksgiving! Question though – if I make this x like 8 how much do I need to increase the cooking time? I use my instapot regularly but I still havenโ€™t figured this part out. Help?! Thank you so much for all the recipes and videos, love yโ€™all!

      Hi Katie!

      I haven’t tried making it on that large of scale. I am not sure if it would fit in a 6-quart Instant Pot. However, you might try making it in 2-3 batches and then combine all the batches into one serving dish. Let me know how it goes!

  5. Are you serious? Only 3 carbs per serving? The corn alone is over 30 grams of carbs for a little more than 5 ounces.

    Seriously . . . everyone, ESPECIALLY US DIABETICS, should do the calculations for this recipe BEFORE trying it out for the first time.

      There was a technical error that was pushing through inaccurate numbers. Thank you for pointing it out. We fixed it. You are ABSOLUTELY correct that everyone with health concerns should calculate their own. We try to stress that everyone should always calculate the numbers from their own ingredients because any auto calculator can have errors, and even when they don’t have errors, products can vary so greatly it can be very different for two different home cooks.
