How to Make Hoosier Cake in a Crock Pot

I have a treat for you today! Years ago, Cris made this amazing cake for Easter in the oven. I was trying to think up a new recipe to try in my crock pot, and remembered that cake. The oatmeal raisin type cake was so delicious and just thinking of the icing had my mouth watering. I knew I had to try it out in my crock pot.
I gave this recipe a try as it was written for the oven. The batter was a bit too moist for crock pot to cook up the center before the edges started to burn. So, I adjusted the ingredients a bit. It still wasn’t quite right. So, I called in the big guns. I called Momma. You see, Momma used to bake cakes professionally when Cris and I were kids. (Her cakes are seriously the best!) I knew she could help me get it just right. This cake is so good that I was willing to try multiple versions of the recipe to make it work in the crock pot. Momma suggested upping the flour just a bit more than I already had and putting an oven safe bowl upside-down in the middle of the crock pot since that is the trouble area. Not only would that keep the batter from being in that pesky middle that doesn’t like to cook up as fast, it would also distribute some of the heat from the crock pot up through the bowl. I knew Momma would have my answer! Now you have this delicious Crock Pot Hoosier Cake to enjoy!
What You Will Need for Crock Pot Hoosier Cake and Brown Sugar Pecan Icing
Crock Pot Hoosier Cake Ingredients
- 1 cup hot water
- 1 cup old fashioned oats
- 1 cup brown sugar
- 1 cup sugar
- 1 tsp vanilla
- 2 eggs
- 1/2 cup butter, softened
- 2 cups all-purpose flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1 cup raisins
Equipment Needed for Crock Pot Hoosier Cake
- Medium mixing bowl
- Measuring cups
- Measuring spoons
- Stirring spatula
- Large mixing bowl and hand mixer or stand mixer
- Casserole crock pot
- Oven safe bowl
- Paper towels or flour sack tea towels
Time Needed for Crock Pot Hoosier Cake
- Prep Time: 10 minutes
- Cooking Time: 3 to 4 hours on high, turning your insert halfway through cooking and taking the lid off for the last 30 to 45 minutes of cooking
- Cooling Time: 30 to 60 minutes
Brown Sugar Pecan Icing Ingredients
- 1/2 cup butter
- 1 cup brown sugar, packed
- 12 oz can evaporated milk
- 1 teaspoon vanilla
- 2 cups shredded coconut, optional
- 2/3 cup chopped pecans
Equipment Needed for Brown Sugar Pecan Icing
- Measuring cups
- Can opener
- Measuring spoon
- Stirring spatula
- Wooden spoon
- Large saucepan
Time Needed for Brown Sugar Pecan Icing
- Prep Time: 2 minutes
- Cooking Time: 25 to 30 minutes
- Cooling Time: 10 to 15 minutes, at least

Crock Pot Hoosier Cake
Ingredients
- 1 cup hot water
- 1 cup old fashion oats
- 1 cup brown sugar packed
- 1 cup Sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 1/2 cup Butter softened
- 2 cups all purpose flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1 cup raisins
Instructions
- Stir together your water and oats in a bowl and set aside.
- In a separate bowl, mix together your brown sugar, sugar, vanilla, softened butter and eggs with a mixer until well combined.
- Add your oats mixture to your sugar mixture and mix with a mixer until well combined.
- Add in your remaining ingredients and stir everything together with a mixer until you have a thick batter.
- Put an oven safe bowl upside-down in the middle of your casserole crock and lightly spray everything with cooking spray.
- Spoon your batter into your insert around the bowl and spread it out evenly.
- Place a flour sack tea towel or paper towels tightly under lid of your crock pot (making sure it won't touch the batter) to catch any condensation and cook on high for 3-4 hours, turning your insert halfway through cooking. Once the cake is set, but the top of middle surrounding the bowl is still moist, remove the lid and let it cook for the remaining 30-45 minutes.
- Remove insert and set on a pot holder to cool completely before icing.

Brown Sugar Pecan Icing
Ingredients
- 1/2 cup butter
- 1 cup brown sugar packed
- 12 oz can evaporated milk
- 2 cups shredded coconut optional
- 2/3 cup chopped pecans
Instructions
- Put your butter, milk and sugar in a large saucepan and heat over medium heat until it comes to a boil, stirring occasionally.
- Once your mixture comes to a boil, stir continually until it thickens. Remember that it will thicken more as it cools.
- Remove from heat and stir in coconut, if desired, and vanilla until well combined.
- Let it cool for at least 10-15 minutes before pouring or spooning on your cooled cake and spread out evenly.
- Sprinkle your chopped pecans on top of the icing.

I would like to try this recipe. I have the casserole crock pot but what size oven safe bowl?
The bowl I used was an oven safe 16 oz Corningware bowl. The bottom of the bowl measures about 4.5 inches across. I hope you enjoy this as much as we do!
