How to Make Loaded Broccoli Cauliflower in a Crock Pot

You guys. This recipe. Oh-so decadent. Everyone LOVES it when we bring it to parties or serve it up for family dinner. SO yummy! I am definitely bringing this to the holidays.
And bonus? It is low carb for those of you looking for something to share that others will love but you can totally eat while maintaining a low carb diet.
Ingredients You Need for This Recipe
- 1lb Frozen Broccoli and Cauliflower
- 1 Cup Pimento Cheese Dip
- 4 0z Cream Cheese Cubed
- 1 Cup Cheddar Cheese
- Salt and Pepper
- 8 Slices Bacon- Divided
- Optional- 3 Green Onions-Chopped
Crock Pot Loaded Broccoli Cauliflower Notes:
- We LOVE using our mini casserole crock for this dish!
- We use our bacon pans to bake our bacon and get it nice and crispy. Bake at 400 for 25-30 minutes. Perfection.
- Carb counts on this dish are HIGHLY dependent on the kind of pimento cheese dip you use. I use Palmetto brand (found in refrigerated section near cream cheese) which has 0 carbs per serving, but some brands are up to 9 carbs per serving. If you can’t find a good low carb version, check out my new homemade version that you can make and control the carbs yourself ;).
- As with any of our recipes, calorie counts and nutritional information varies greatly depending on which products you choose to use when cooking this dish.
- All slow cookers cook differently, so cooking times are always a basic guideline and should always be tested first in your own slow cooker and time adjusted as needed.

Crock Pot Loaded Broccoli Cauliflower
Ingredients
- 1 lb Frozen Broccoli and Cauliflower
- 1 Cup Pimento Cheese Dip
- 4 oz Cream Cheese, Cubed
- 1 Cup Cheddar Cheese
- Salt and Pepper
- 8 Slices Bacon crisped, crumbled and divided
- Optional- 3 Green Onions, Chopped
Instructions
- Combine all ingredients in a mini casserole crock or traditional 3-4 quart slow cooker, reserving some bacon for garnish.
- Cover and cook on low 3-4 hours, stirring occasionally.
- Top with bacon and serve.

We haven’t tested this recipe with fresh broccoli and cauliflower, so I’m not sure what the timing difference would be. Watch it closely the first time you make it to adjust the timing as needed. If you give it a try, let us know how it goes!

I didn’t have pimento cheese, and I really do not care for it anyhow. I substituted Velveeta, and it came out fantastic!

Could not find pimento cheese near me. Made from scratch using recipe provided. Tasted gritty and needed more ingredients besides cheese.

I only have a large crock pot. Is that ok to use?

Hi Michelle-
If you cook it in a large crock pot, it will cook much faster. You can slow cooking time by cooking it inside an oven safe bowl inside your large crock pot also. Hope that helps!

Is the bacon supposed to be cooked before going into crock pot? Recipe doesn’t say cooked bacon, but then the notes mention a tip about cooking bacon?…
