This Crock Pot Pancakes for Two recipe is super easy to throw together, and your crock pot does all the work. They taste great too!

This Crock Pot Pancakes for Two recipe is so incredibly easy. It can be thrown together in just a few minutes and can cook up while you are getting ready for your day! My entire family loves the delicious flavor of these pancakes.
You will notice in the ingredients that the water measurement is in cups and tablespoons. The reason for this is that when reducing the original recipe, it was a fraction of a cup (and not one of the fractions we have a measuring cup for). So, I figured it would be easier to do it this way. You might also notice that there is a full tablespoon of vanilla extract. The vanilla just really takes these pancakes to the next level. Just a heads up, it also gives the pancakes a bit of a darker color. I truly hope you enjoy these as much as we do!

What You Will Need for Crock Pot Pancakes for Two
Ingredients Needed
- 3/4 cups pancake mix (the kind that only requires water)
- 1/2 cup plus 1 tablespoon water
- 1 tablespoon vanilla
- Cooking spray
- You favorite pancake toppings
Equipment Needed
- Measuring cups
- Measuring spoons
- Small to medium mixing bowl
- Whisk
- Stirring spatula
- 2.5 Quart Small Casserole Crock Pot OR 4 Quart Oval Crock Pot
- Paper towels
- Toothpick
Time Needed
- Prep Time: 5 minutes
- Cooking Time: 45 minutes to 1 hour on high, turning your insert halfway through cooking time if your slow cooker has any hot or cool spots and does not cook evenly

Crock Pot Pancakes for Two
Ingredients
- 3/4 cup pancake mix the kind that only uses water, not baking mix
- 1/2 cup water
- 1 tablespoon water
- 1 tablespoons vanilla extract
- Your favorite pancake toppings
Instructions
- Whisk together 3/4 cup pancake mix, 1/2 cup water plus 1 tablespoon water and 1 tablespoons vanilla extract in a small to medium mixing bowl.
- Pour your batter into a lightly greased 2.5 quart casserole crock pot OR 4 quart oval crock pot using a stirring spatula to get all of the batter out of the bowl.
- Place a few paper towels underneath the lid of your crock pot when putting it on the insert. Make sure you gently pull the paper towels tight so they do not touch the batter.
- Cover and cook on high for 45 minutes to 1 hour, turning your insert halfway through cooking if your slow cooker does not cook evenly. (It is done when it can pass the toothpick test.)
- Cut into pieces of desired size and serve with Your favorite pancake toppings.
