How to Make Easy Pancakes in a Crock Pot
Aunt Lou here.
We love pancakes in my house. They have actually become a tradition for us. On Sunday mornings, Michael makes pancakes for everyone. The other day, Cris was telling me how she makes pancakes in the oven with a 9 x 13 pan so she doesn’t have to worry about flipping them. I knew I wanted to give this a try in my casserole crock pot. The results were not only super easy to make, but yummy to boot!
In my house, we love to add vanilla extract to our pancake mix. It is our secret ingredient that just adds an extra layer of flavor. If you do not like having vanilla flavoring in your pancakes, feel free to leave it out. It is completely up to you. We just love the extra flavor with this addition. Without the vanilla, the color of your pancake will be a bit lighter.
When serving this up, I just cut the pancake down the middle across the length of the insert. Then I cut the pancake into fifths across the width of the insert to give me 10 rectangle pancakes. You can cut them as big or little as you prefer.

Instructions
- Whisk together all your ingredients in a medium bowl.
- Pour your batter into a greased casserole crock pot using a stirring spatula to get all of the batter out of the bowl.
- Place a few paper towels underneath the lid of your crock pot when putting it on the insert. Make sure you gently pull the paper towels tight so they do not touch the batter.
- Cover and cook on high for approximately 1 hour, turning your insert halfway through cooking if your slow cooker does not cook evenly. (It is done when it can pass the toothpick test.)
- Cut into pieces of desired size and serve with favorite pancake toppings.
