A friend of mine and her kiddos were visiting when I made this soup. Not only was it quick to throw together before they arrived, everyone from the youngest kiddo to the oldest adult gobbled this soup right up…veggies included! Crock Pot Sausage Tortellini Soup
Ingredients
- 2 lbs mild ground breakfast sausage cooked and drained
- 19 oz frozen cheese tortellini
- 16 oz bag baby carrots
- 3 ribs celery sliced
- 1 small onion diced
- 1/4 cup fresh parsley chopped
- 2 bay leaves
- 6 cups chicken broth
- 1 cup water
Instructions
- Place your carrots across the bottom of your 6-quart slow cooker
- Top with your remaining ingredients, making sure your tortellini is immersed in the liquid
- Cover and cook on low for 4 hours or high for 2 hours, stirring occasionally
