How to Make Easy Quesadillas in a Ninja Foodi Using the Air Crisp Function

Oh my word, dear readers! These Easy Ninja Food Quesadillas were an incredible success at my house. I talk about trying to find recipes that my picky eater will try and like quite a bit. This recipe received rave reviews from everyone, even my picky eater! Michael and both kids made a point to come and tell me how much they loved these quesadillas, and they requested them the next day too! That’s how good they are.
I tried this recipe with a couple different methods to see if I needed to have something to hold the quesadillas together as they were cooked. When I placed a Silicone Reusable Ninja Foodi Liner not only beneath the quesadillas, but also on top, they cooked well and were pretty flat. I tried it again with just putting a liner beneath the quesadillas, and they did not open up while cooking but were not as flat. So, you can do whichever way you prefer. However, if you cook one by itself, I would recommend putting a silicone liner on top to keep it closed. I tried cooking just one by itself, and it tried to come open during the first cooking time.
What You Will Need for Easy Ninja Foodi Quesadillas (Air Fryer Recipe)
Ingredients Needed Per Batch
- 2 flour burrito size tortilla shells, divided
- 4 tablespoons refried beans, divided
- 1/2 cup Mexican style blend shredded cheese, divided
- 4 tablespoons diced red bell peppers, divided
- 4 tablespoons diced green peppers, divided
- Optional for serving: sour cream, salsa, guacamole
Equipment Needed
- Sharp knife
- Cutting board
- Can opener
- Measuring spoons
- Measuring cup
- Butter knife
- Plate
- 6.5 Quart Ninja Foodi or 7 Quart Air Fryer
- Optional (but highly recommended): 1 or 2 Silicone Reusable Ninja Foodi Liner
- Heat safe gloves
Time Needed Per Batch
- Prep Time: 10 minutes
- Cooking Time: approximately 4 minutes at 350 degrees Fahrenheit, flip and 4 more minutes at 350 degrees, until your cheese is melted and your tortilla is crisp with golden edges

Easy Ninja Foodi Quesadillas
Ingredients
- 2 burrito size flour tortillas divided
- 4 tablespoons refried beans divided
- 4 tablespoons red bell pepper diced, divded
- 4 tablespoons green bell pepper diced, divided
- 1/2 cup Mexican Blend Shredded Cheese divided
Instructions
- If desired, place a silicone reusable liner on your air crisp plate and preheat your Ninja Foodi or Air Fryer to 350 degrees for 3 minutes.
- Place one tortilla on a plate and evenly spread 2 tablespoons of refried beans on one half.
- Sprinkle 2 tablespoons of diced red bell peppers and 2 tablespoons of diced green bell peppers evenly over refried beans.
- Evenly sprinkle 1/4 cup Mexican blend shredded cheese over everything, fold the tortilla in half and carefully place in on the air crisp plate in the Ninja Foodi.
- Prepare the second tortilla just like the first and place on the other side of the Ninja Foodi air crisp plate. (If a flatter quesadilla is desired, place a second silicone reusable liner on top of both quesadillas.)
- Close the lid, select the air crisp function and cook at 350 degrees Fahrenheit for 4 minutes.
- Open the lid (remove the top silicone liner if you used one) and use heat safe gloves to carefully flip each quesadilla. If desired, place the top silicone liner back on top of both quesadillas.
- Close the lid, select the air crisp function and cook an additional 4 minutes at 350 degrees. It is done when the cheese is melted, the edges are golden and the tortilla is crisp. If desired, top with sour cream and/or guacamole and dip in salsa.
