How to Make Fiesta Beef Casserole in an Oven

It has been a while since I have made the crock pot version of this Fiesta Beef Casserole oven recipe. I had forgotten how much my family and I love this recipe! It is sometimes hard to get one of my kiddos to eat a full serving at meal time. I gave said kiddo a small portion just in case. That portion was finished and a request for more was made. In fact, everyone in my house went back for seconds. This casserole is that good!
This is a pretty quick recipe to make as it is now, but if you want to make the prep for this recipe even faster, you can make up a batch of our Crock Pot Make Ahead Ground Beef and use one pound of it. It would take the place of the ground beef and the diced onion in the recipe ingredients since it already has onions in it.
What You Will Need
Ingredients Needed
- 1 lb ground beef
- 1 small onion, diced
- 15 oz can black beans, drained, but not rinsed
- 1 cup mild salsa
- 3/4 teaspoon garlic powder
- 10.5 oz cream of chicken soup
- 10 oz diced tomatoes with green chiles, drained
- 2 cups Mexican blend cheese, divided (1/2 cup in mixture, 1.5 cups on top)
- Doritos, crushed, optional
Equipment Needed
- Skillet and strainer or micro cooker
- Sharp knife
- Cutting board
- Can opener
- Measuring cups
- Measuring spoon
- Large bowl
- 2.5 quart casserole dish
Time Needed
- Prep Time: 10 minutes
- Cooking Time: 30 to 40 minutes at 350 degrees Fahrenheit

Fiesta Beef Casserole (Oven Recipe)
Ingredients
- 1 lb ground beef
- 1 small onion diced
- 15 oz can black beans drained, but not rinsed
- 1 cup Salsa
- 3/4 teaspoon garlic powder
- 10.5 oz can cream of chicken soup
- 10 oz can diced tomatoes with green chiles
- 2 cups Mexican Blend Shredded Cheese divided
- Doritos
Instructions
- Preheat your oven to 350 degrees Fahrenheit.
- Brown your ground beef with your onion and drain.
- Combine your browned ground beef, black beans, salsa, garlic powder, soup, tomatoes and 1/2 cup of shredded cheese.
- Spread your mixture in a lightly greased 2.5 quart casserole dish.
- Top with remaining cheese
- Bake for 30-40 minutes, turning halfway through cooking, until your cheese is melted and the edges are bubbly.
- Serve hot with crushed Doritos, if desired.
