A great way to make prep for this recipe, and many other recipes that use ground beef, quicker and easier is to use our Crock Pot Make Ahead Ground Beef recipe. If you use the make ahead ground beef, the hardest part of the prep for this recipe is peeling and slicing potatoes! Easy peasy!
What You Will Need
Ingredients Needed
- 1 lb ground beef
- 2 cloves garlic, minced (If you use the Crock Pot Make Ahead Ground Beef in this recipe, cut the garlic down to on clove.)
- 1 oz packet taco seasoning
- 10.5 oz cheddar cheese soup
- 4 cups potatoes, peeled and sliced
- 2 cups shredded cheddar cheese
- 1 cup beef broth
Equipment Needed
- Skillet and strainer or micro cooker
- Garlic press
- Can opener
- Vegetable peeler
- Sharp knife and cutting board or vegetable slicer
- Measuring cup
- 9 x 13 baking dish
- One piece of aluminum foil
Time Needed
- Prep Time: 10 minutes
- Cooking Time: 1 hour on 400 degrees F, 40 minutes covered with aluminum foil and 20 minutes uncovered

Beefy Potato Taco Casserole
Ingredients
- 1 lb ground beef
- 2 cloves garlic minced
- 1 oz packet taco seasoning
- 10.5 oz cheddar cheese soup
- 4 cups potatoes sliced
- 2 cups shredded cheddar cheese
- 1 cup beef broth
Instructions
- Preheat your oven to 450 degrees F
- Brown your ground beef with garlic and drain
- Place your potato slices in the bottom of a slightly greased 9x13 baking dish
- Spread your ground beef evenly on top of your potatoes
- Sprinkle your taco seasoning on top of everything
- Spoon your soup evenly on top
- Sprinkle your cheese evenly across the top of the everything
- Gently pour your beef broth evenly around your baking dish
- Cover baking dish with a piece of aluminum foil and bake for 40 minutes
- Remove foil and bake for 10 additional minutes
- Let it cool for 10-15 minutes before serving

Hello, I made the Beefy Potato Taco Casserole yesterday and wanted to let you know it was very good however, i did make some changes to personalize it for me. I added one small onion with the garlic to cook the ground beef and was unable to find the Cheddar cheese soup. They did have a Fiesta Nacho Cheese soup that I felt would be good with the taco theme of the recipe. It was actually very good, added just a little spice to the taste. I used the sliced potatoes as called for but thought maybe using cubed potatoes would be better since the sliced potatoes kind of stuck to the bottom of the pan. I’ll try that next time I make it which will be soon! I can see where this recipe could be adapted to use some kind of pasta as well. I enjoy getting the emails have tried a few of the recipes. Thanks for your effort to help us home bound people eat something different!
