This soup is one of my favorite low carb soups. We like to make it in our Crock Pot (click here for the crock pot version) and in our Electric Pressure Cookers. The flavor of this soup is SO GOOD. If you love bacon cheeseburgers, you must try this soup.

Electric Pressure Cooker Bacon Cheeseburger Soup (Low Carb) Recipe
Low Carb Electric Pressure Cooker Bacon Cheeseburger Soup
Ingredients
- 5.5 cups Beef Broth
- .5 cup pickle juice
- 2 ribs celery chopped
- 1 carrot chopped
- 3 green onions chopped, divided
- 2 tbsp fresh dill
- 2 lbs ground beef
- 1 cup heavy cream
- 8 oz cream cheese very soft ( we heat ours for 30 sec in the microwave)
- 3 cups shredded cheddar cheese
- 8 slices bacon
- garnish: pickles, ketchup, mustard, additional cheese etc.
Instructions
- If using a Ninja Foodi, air fry bacon on the metal rack or air frying basket at 360 for 12-14 minutes and carefully remove from the pot. If using an Instant Pot, fry bacon on saute feature and remove from the pot.
- Fry ground beef in the bacon fat on the saute feature. Drain and return the beef to the pot.
- Pour broth, pickle juice, celery, carrot, dill, white parts of the green onion into the pot.
- Cook under high pressure for 15 minutes and naturally release for 10 minutes.
- Stir in cream cheese and cheddar cheese until melted.
- Add heavy cream and stir.
- Serve in bowls and top with bacon, the remaining green onion, pickles and additional garnish.
