It feels like it has been forever since I have shared with you guys. Big thanks to Aunt Lou for covering for me while my family was on vacation. I have missed you guys! So, I cooked up something SUPER yummy to share.The cooler weather seems to have come to Indiana (to stay?) and with it I always start grabbing for my crock pot breakfast recipes– specifically oatmeal. We LOVE our Apple Cinnamon Overnight Oatmeal and make it all the time.

But a while back I got to thinking about what if I tried a Peaches and Cream Overnight Oatmeal in the crock pot instead…
The inspiration came when I saw my friend Liz’s Peaches and Cream French Toast.
Doesn’t that look yummy! So over the last couple months I have been developing and testing out an overnight oatmeal version and finally have found one that we absolutely love.

Speaking of Liz… she is the first of ten farmers I will be featuring in the coming weeks in my Faces Behind My Food series. As many of you know, I grew up on a farm and many, MANY of my close girlfriends are farmers. A reader once told me they were so excited when I mentioned my farmer friends because they didn’t know any farmers. Peaches and Cream Overnight Oatmeal {Crock Pot}
Boy that made me hungry! How about we get back to the Peaches and Cream Overnight Oatmeal, shall we?
A Few Notes:
- Like I said, I have tested several ways to make this– but the one below is my very favorite. You can make this with canned peaches, but I highly recommend making it with fresh or at least frozen.
- You can also make this with regular cream cheese, but again, I highly recommend using the whipped cream cheese for a better end result.
- Under NO CIRCUMSTANCES should you use old fashioned or quick oats, this recipe requires Steel Cut Oats… they take longer to cook and handle the long cooking time much better than other kinds of oats.
- We use a heat-safe bowl inside our slow cooker and pour water on the outside of the bowl to help the oatmeal cook evenly. This method always gives us great results and no burning. Do not add water more than halfway up the outside of the bowl or the cooking water will boil over into your delicious oatmeal and create a dreadful mess.
Ingredients
- 2 Peaches Pitted and Cut Into Chunks Peel if desired, we don't
- 1/2 Cup Brown Sugar I used 1/4 Cup Truvia Brown Sugar Blend
- 2 teaspoons Cinnamon
- 1 Cup Steel Cut Oats DO NOT USE Quick or Old Fashioned Oats
- 1.5 Cups Skim Milk
- 1.5 Cups Water
- 1 teaspoon Vanilla
- 6 Tablespoons Whipped Cream Cheese
Instructions
- Place a large heat-safe bowl inside your slow cooker. (We use this one).
- Place peaches, sugar and cinnamon in the bowl and mix well.
- Add the steel cut oats, milk, water and vanilla and stir well.
- Evenly dollop the cream cheese on top.
- Pour additional water into the crock pot (outside the bowl) until it reaches halfway up the outside of the bowl.
- Cover the crock pot and cook on low for 8 hours.
Slow Cooker Recommendations
I have used about every one of my 6 qt slow cookers with the heat-safe bowl inside for this recipe. The bowl is not only perfect for this recipe, but it will also be great for other recipes where you need to reduce the size of your crock or cook items like breads and desserts.

I used my large 6 cup glass measuring cup for this! Had I not thought to use that, I was going to mix everything in a bowl and even divide amongst a few glass jars for the same technique. Could be a nice grab and go option! Was just looking around my house for what else people could use.

As I mentioned in the post, the leftovers from this dish are fantastic reheated for a hot breakfast throughout the week.
Slow cookers cook best when two thirds full and really shouldn’t be less than half full so, unfortunately I doubt we will be offering 1-2 serving options anytime soon. You might try googling for sites that offer those kinds of options to better fit your needs. Good luck – C
What’s a single man to do? Cook this dish for 6? How about helping us too!! Add a scaled down version for 1-2 people so most of the world (those that do’t need 6-7 servings) can enjoy your dishes also.
