I really love easy recipes that everyone in my family enjoys. This Salsa Crock Pot Shredded pork is one of those recipes. It is easy enough for a person who is new to cooking to make and flavorful enough to impress anyone who eats at your table. You can eat this pork on a bed of rice or cauliflower rice or in a taco, burrito or bun or just on its own!

I first tried this with a 2 lb pork loin. However, my pork loin did not have enough fat on it to become super tender. While it tasted great, it did not shred easily. The second time I made this, I used 2 lbs of pork tenderloin. The shredding step was much easier this time.

I think that a pork loin could still be used in this recipe, as I have successfully used pork loins in shredded pork recipes before, but you will need to make sure that it has enough fat on it to help it become so tender it can be shredded easily. Whether you are using a pork loin or a pork tenderloin, you will want to watch it closely the first time you make it and use a meat thermometer so you can know right when it hits the 145 degrees Fahrenheit mark. In my slow cooker, my pork loin hit that mark right 4 hours in. For my pork tenderloin, it was done in 3 hours. Each slow cooker cooks differently, so you will want to use a meat thermometer to be sure on timing for your slow cooker.

What You Will Need for Salsa Crock Pot Shredded Pork

Ingredients Needed

  • 2 lb pork tenderloin
  • Garlic salt and pepper to taste
  • 16 oz jar salsa
  • 4 oz can chopped green chilies, undrained
  • Optional: prepared white or yellow rice

Equipment Needed

  • Scissors
  • Can opener
  • Fork (A fork makes it easier to put the chopped green chilies evenly across the top of everything.)
  • 4 quart slow cooker or 6 quart slow cooker
  • Plate
  • Two Forks
  • Serving spoon

Time Needed

  • Prep Time: 5 minutes
  • Cooking Time: 3 to 4 hours on low, turning your insert halfway through cooking
  • Shredding Time: 5 to 7 minutes

Ingredients

  • 2 lb Pork Tenderloin
  • 16 oz Jar Salsa
  • 1 Can Green Chilies
  • garlic salt and pepper to taste

Instructions

  • Place your tenderloin in 4 or 6 quart crock pot and season to taste with garlic salt and pepper.
  • Add remaining ingredients and cook on low for 3 to 4 hours, turning your insert halfway through cooking, until the internal temperature reaches 145 degrees Fahrenheit.
  • Place tenderloin on a plate, shred with two forks, return shredded pork to crock pot and stir into juices.
  • Serve on its own, over rice or cauliflower rice or on a taco, burrito or bun.
