Aunt Lou here.

I make a ton of recipes. While Michael and I enjoy almost all of them, I cherish the recipes that Ryder also slaps his seal of approval on. This Savory Crock Pot Breakfast Casserole was one of them. As he was eating it (for dinner), he just kept saying, “This is REALLY good Mommy! Good job!” Music to a mother’s ears!

Savory Crock Pot Breakfast Casserole

This recipe would be great for when you have company over or made up at the beginning of the week to provide breakfast for your family all week. It makes a BUNCH and it is delicious!

Now the original recipe said to cook on low for 8-9 hours, until set. However, mine was done just before 6 hours were up. So, I would recommend watching your crock pot the first time around to see which end of the spectrum your timing falls on. Actually, I recommend that for every recipe when you make it the first time. It just saves a lot of heartache. 😉

Slow Cooker Recommendation

I used my Travel Crock Pot for this recipe. It was perfect because of how deep it is. I definitely would not use a crock pot smaller than 6 quarts. This is one massive recipe!

I'm wife to Michael (not Mikey 😉 ) and mom to Mr. Ryder and Miss Iyla. I'm just walking through this life step by step focusing on enjoying the little things in life. I am in awe of the many blessings big and small I receive daily from a pretty amazing God who calls me His own. Sometimes life is crazy and messy, but I am loving every minute of it.

Can you use savory stuffing mix instead of the bread ? I have done this before in the oven but now it sure go not sure how well it would turn out in a crockpot.

      Hi Colleen!

I haven’t tried stuffing in this recipe before, but if you give it a try, let me know how it goes.

Would you think this would freeze well? If I sliced it first?

      Hi Katie-
Freezing it may impact the texture a bit but we can’t say for sure because we haven’t tried it. If you do, please let us know how it goes!

Could gluten free bread be used instead of regular bread? I am looking for brunch ideas to serve at a birthday party.

It is a ton of food! I am sure you could halve it. The first time you make the smaller casserole, make sure you watch it closely so you can know how to adjust the cook time. Enjoy!

We love hearing from you, it totally makes our day! Please remember, our comment section is much like our dinner table... You don't have to like everything we serve up, but you do have to use your manners.
