Macaroni and cheese is a huge favorite in this house. I love trying out all kinds of recipes. When I was looking through our recipes, I saw that Cris had made this one, and it was very different from anything I had tried before. So, I thought I would give it a try but with the twist of using the 3.5 Quart Casserole Crock Pot instead of a 6 Quart. It changed the timing a bit, but this Slow Cooker Mac and Cheese Casserole was still a huge hit!

To be perfectly honest, I am not a mayo girl. So, I know I am not an expert. Cris mentions in the original post that using Duke’s Mayo is essential to get the wonderful flavor of this recipe. I decided that I better listen to this advice since I am not much of a mayo expert, and the results were delicious!

What You Will Need for Slow Cooker Mac and Cheese Casserole

Ingredients Needed

  • 1 cup Duke’s mayo
  • 1 cup sour cream
  • 2 cups shredded mozzarella cheese
  • 2 cups shredded sharp cheddar cheese
  • 1 cup ricotta cheese
  • 1 3/4 cup uncooked macaroni
  • Salt and pepper to taste
  • 1/2 sleeve Ritz crackers, crushed

  • Prep Time: 10 to 15 minutes
  • Cooking Time: 1 hour and 45 minutes to 2 hours and 15 minutes on high, rotating your insert halfway through the cooking time if your slow cooker does not cook evenly

  • Cook 1 3/4 cup uncooked macaroni until it is al dente and drain.
  • While the macaroni is cooking, in a large bowl, combine 1 cup Dukeโ€™s mayo, 1 cup sour cream, 2 cup shredded mozzarella, 2 cups shredded sharp cheddar, 1 cup ricotta cheese and salt and pepper to taste and stir well.
  • Add cooked macaroni to the mixture and stir until well combined.
  • Spread mac and cheese out evenly in a lightly greased 3.5 Quart Casserole Crock Pot.
  • Cover and cook on high for 1 hour and 45 minutes to 2 hours and 15 minutes, rotating your insert halfway through the cooking time if your slow cooker does not cook evenly.
  • Once the edges are golden, top with approximately 1/2 sleeve of crushed Ritz crackers.
