How to Make Beefy Fiesta Rice Bean Bowl for Two in a Crock Pot

If you are looking for a tasty, hearty and filling recipe for two people, then this Beefy Crock Pot Fiesta Rice Bean Bowl for Two is for you. It is really simple to make, and it checks off all the boxes.
In this recipe, you will add the rice towards the end of the cooking time. When cooking rice in a slow cooker, it is imperative you know your slow cooker. I have a wide variety of slow cookers, and I have yet to find one that cooks perfectly even. That is why I have you stir this, as needed, once the rice is added. You will also want to watch it closely. If you do these things, then you will have an incredible meal to enjoy!

What You Will Need for Beefy Crock Pot Fiesta Rice Bean Bowl for Two
Ingredients Needed
- 1/2 lb ground beef
- 1/4 cup white onion, diced
- 1 1/2 teaspoons minced garlic
- 2/3 cup diced tomatoes with green chilies, undrained
- 1 cup black beans, undrained
- 1 cup refried beans
- 2 cups beef broth
- 1 tablespoon taco seasoning
- 5 oz package yellow rice
- Optional for serving: Tortilla chips
Equipment Needed
- Skillet and strainer or micro cooker
- Measuring spoons
- Measuring cups
- Safety can opener
- Small stirring spatulas
- 3 Quart Crock Pot or 4 Quart Crock Pot
Time Needed
- Prep Time: 15 minutes
- Cooking Time: 2 hours and 30 minutes to 3 hours on high

Beefy Crock Pot Fiesta Rice Bean Bowl for Two
Ingredients
- 1/2 lb lean ground beef
- 1/4 cup white onion diced
- 1 1/2 teaspoons minced garlic
- 2/3 cup canned diced tomatoes with green chilies undrained
- 1 cup canned black beans undrained
- 1 cup canned refried beans
- 2 cups Beef Broth
- 1 tablespoon taco seasoning
- 5 oz package yellow rice
- Tortilla chips optional for serving
Instructions
- Fry 1/2 lb lean ground beef with 1/4 cup white onion and 1 1/2 teaspoons minced garlic and drain.
- In a 3 or 4 quart crock pot, combine the beef mixture, 2/3 cup canned diced tomatoes with green chilies (undrained), 1 cup canned black beans (undrained), 1 cup canned refried beans, 2 cups Beef Broth and 1 tablespoon taco seasoning.
- Cover and cook on high for 2.5-3 hours.
- About 50-60 minutes before your cooking time is up, stir in 5 oz package yellow rice. Cook until the rice has reached desired tenderness, stirring as needed. Serve with Tortilla chips, if desired.
